Japan conquest week 1, 36th. Currently, there are several types of sake from prefectures that I have yet to drink in our fridge as I aim for a round-the-Japan sake trip 😀. Today, the wife told me that tonight's dish is ahi jogyo, so I chose Ishizuchi, a solid sake, based on your post from among those waiting to be served 😀. The sake I chose to compare was Kamikawa Taisetsu, which was opened the other day 😀. The result was... delicious 😀. Both sakes were solid, but the Ishizuchi was more floral and tasty 😀. Both Ishizuchi and Kamigawa Taisetsu are like a double for a solid tasting food 😀.

Congratulations, 101 Check in ㊗️ I was surprised to hear from a friend of mine at Sake-no-wa I was surprised myself when I learned that my last post had 100 check-ins 😀. Thanks to everyone at Sake-no-wa, my world of sake has really expanded 😀 Thank you so much 💕. Thank you 💕 For my 101st check-in, I decided to go with Kamikawa Taisetsu for my first trip to Hokkaido, as befitting a trip to Japanese sake 😀. Drinking together at home were Kido, Haneya and Suidama 😀. Kamikawa Taisetsu...not so spicy or fruity, but it didn't interfere with any dishes 😀 Even the wife, who is not a tastemaker, enjoyed this one. Even my wife, who is not good with taste, said this was the first sake she had ever had. I was surprised😅. For my 101st check-in, I got a good sake 😀.

Kaku-uchi Report (3) This is another sake that I would not normally choose, but since I was alone, I went for it. It was a seasonal hiyaoroshi, but the strong flavor was stronger than the mellowness. Sometimes, drinking alone outside like this is fun to encounter new tastes 😀. But...I found a sake I've been curious about for a while, so I'm taking the train home with a few bottles on the way😅. I was told I'm not allowed to buy them until the end of the move, so how will I put them away in the fridge 😓.

Kaku-uchi Report (2) For the second sake of the Kaku-uchi, I had Aki-Agarashi, again considering the season. I probably would not have chosen this sake if I were with my wife, but it was an interesting sake with a deep taste 😀.

Kakunin Report (1) I found a kaku-uchi machine by visiting a little store I discovered the other day where you can buy Senkou regularly. I tried my first sake with Choyu. Usually, my wife likes sweet and tasty sakes, so this was not a sake I would choose, but it was the first time in a long time that I had a solid sake.

Purchased at a liquor store. It has been a long time since I returned to my parents' home in Osaka, so I haven't had Osaka sake for a long time. Rarity is normal. Cold sake. Beautiful and gentle aroma. At the beginning, it tasted fresh like a summer sake, but as you drink it, it gradually becomes more brawny. There is no acidity and a bit of bitterness. Slightly dry with good sharpness. The aftertaste is normal. We had it with okonomiyaki and did not get tired of drinking it. It goes well with dishes with strong flavors. There are only a few sake breweries in Osaka, including Akizuka, in the Kansai area, but I have the impression that many of them are suitable for sake connoisseurs because of their classic style and very robust flavor.

Transparent with a slight yellowish tinge. Some fine bubbles can be seen. Fruity aroma reminiscent of peaches. The aroma is strong. The mild acidity is accompanied by a pleasant effervescence in the round mouthfeel. The hint of aroma is like eating a peach. It has a medium lingering aftertaste with a moderate astringency. Aromatic sake.

From Shinmasa Sake Brewery in Akita, Japan, this is "viridian" from colors. By the way, "Tengaju" seems to mean velvet or velvet. The appearance is crystal with slight yellow tints. The aroma is beautiful, with hints of muscat and melon, like a refined white wine. On the palate, there is a pleasant chouxiness. The nose also has a hint of green grassy aroma. The wine finishes with a fine, light acidity. The beautiful and delicate acidity and umami are accompanied by a light, but not thin, pleasant sweetness that disappears in a flash. The back palate has a slight bitterness, but it is washed away and reset by the light acidity and gassiness. It seems as if you could drink it indefinitely. Anyway, I felt it was a wonderful sake, light but not thin, with the softness of a wooden barrel brewing process. Thank you for the treat 🍶.

This year's spring sake was Senkou with the senior members of my wife's company! The easy drinking quality of the sake is a foul class. The weather was unfortunately rainy, but we had a good time.

Rich aroma. Mild flavor typical of junmai sake. I felt a slight sourness at the beginning of drinking, but it disappeared when I ate it with fried chicken, and it became a pleasant taste on the palate. Not only Akitora, but other sake from Kochi seem to focus on dry, junmai sake.

Continued from yesterday at Eki Marché Osaka Yamanaka Sake Shop Sake rice is a blend of 80% Yamadanishiki and 20% Gohyakumangoku with a milling ratio of 60% Alc 16, unfiltered raw sake with 7-agar yeast ✨. Fruity aroma, sweet and juicy like grapes on the palate. It has a fruity aroma and is sweet and tasty on the palate with a juicy, grape-like flavor. It was the sweetest and most delicious of the 6 types we drank that day and my favorite 💕💕.

Continued from yesterday at Eki Marché Osaka Yamanaka Sake Shop First Shimane Prefecture sake✨. Sake rice Yamada-Nishiki, milling ratio 60%, Alc 14 I was curious to try this sake because it was described as a four-stage brewing process in which the sake is brewed in a three-stage brewing process and the raw yeast mother is added before the pressing. Because the sake yeast is naturally cultured, lactic acid bacteria are active and acidity tends to be high. The acidity is a bit high at 2.3, but it is easy to drink and the mouthfeel is clean and easy to drink. It would go well with mackerel simmered in miso or eggplant dengaku.

Also at Yamanaka Sake Shop at Eki Marche First ✨Yago Label✨. Sake rice Jinryoku, Polishing ratio 60%, Alc 13 Pale gold in color with a caramel-like scent. Mature flavor and sweetness on the palate, followed by sourness that makes the tongue a little tingly. The server's description didn't mention the alcohol content or the rice used, so I looked at the product for sale later, but it was very drinkable, which is hard to believe for a sake with an Alc of 13! I was surprised by the prend of new sake and 2 year aged sake. There was no hint of aging or difficulty in drinking, and the umami, sweetness, and acidity came in stages without mixing, so it had a deep taste as if you were drinking three different kinds of sake even though you were taking a sip. It was really a surprisingly delicious sake.
