Additional time after the SENKYO✕UA limited edition sake party at shima&sake&coffee (3) Let's try a different version of this sake 🍶. Sotogahama Junmai Ginjo Haikara The same mellow melon-like aroma, melon-like sweetness and umami, mellow lingering taste and slight bitterness. Similar flavor profile, but if you compare Monochrome and Haikara, Haikara has slightly stronger acidity and bitterness 🤔. And the fourth one I was told to drink because it's interesting. I didn't know about this one, but it is a whiskey produced by Nishi Shuzo, which brews Tenpyo and Tominohozan shochu. I had it on the rocks, but it's quite light in body, so I think it would be drunk with a highball! ［Nishi Shuzo is doing a lot of different things. ✨️ This concludes my post on the shima & sake & coffee event 🔚. Additional time after the SENKYO✕UA limited edition sake party at shima&sake&coffee (2) After the shocking "Sentori Snowman 2025" was opened, the customer next to me and I ordered and compared the sake we were really interested in, which had been sitting in the cellar before the event 🥰. Sotogahama Junmai Ginjo Monochrome. The aroma was like a mellow melon, the taste was sweet and umami, and the finish was mellow and lingering. I looked at the back of the bottle and saw that this is from the Tasake brewery 😲 I didn't know that. ✨️

Additional time after the SENKYO✕UA limited edition sake party at shima&sake&coffee (1) After all the drinks had been consumed, one of the other participants brought this year's version of the "Snowman" and we all enjoyed it together 🥰. However, there was an incident here: ❕️ The first photo shows the gas escaping without opening the bottle because it was laid on its side while being brought to us, and its capacity was reduced to one third as shown in the first photo. But everyone was curious about the taste even in this state, so we had some 🤣. Sentori Snowball 2025 (out of gas) Rich aroma, taste of lactobacillus drink and bitter aftertaste. In a word, very rich 😋. I'm sure there are people who would like this but it's a very high class drink. No - but is it so much less 🤔?

SENKYO✕UA Limited Sake Party at shima&sake&coffee The last one is here 🍶 after the "Edo-togari" (Edo trip). SENKOKU UA 1st 2024 AKA AKA, NAMAHASHIZUKURI". It has a clear acidic aroma, a rich umami and acidity, and a refreshing aftertaste. Personally, I think I like it better than "Ao" before "Edogari" 🤔. Last but not least, the blue cheese pasta with pear and prosciutto ham. The pasta is quite thin like somen noodles, and the salty flavor of the prosciutto and blue cheese is delicious 😋. That's the end of the review in a nutshell, but we're back to the aditional time section 🤣.

SENKOKU UA 1st 2023ver The aroma is a little beetle-like, the mouthfeel is gassy, the acidity is clean, the flavor is mild and lingering, and the finish is refreshingly acidic, just like Sentori. As the temperature rises, it has a slightly fannish sweetness. Pairing: Apples and prosciutto cream cheese. The chopped prosciutto ham is also inside the olives, which makes this a difficult dish to pair with. When paired with "Akatombo", the sweetness of the apple and the flavor of the wooden vat combine to create a pleasant acidity.

The balance is quite pleasing when drunk on its own, and personally, it is my favorite of all the sake I drank that day. The order of the sake served at the event was as shown in the second page of the lineup chart. The order of the second sake was as follows. Senkou - Senkohana (sparkling firework) The aroma is like a soda-laced rumney or a pineapple, and the mouthfeel has a slight gaseous feeling. It is more like a sparkler flickering faintly in your hand than a gorgeous fireworks display in the summer night sky. I feel somewhat wistful 🤔 Pairing: Blue Cheese Bucket with Pear and Apple When eaten by itself, the blue cheese bucket has the saltiness and flavor of blue cheese, but when eaten with pears and apples, the blue cheese loses its peculiarity and the fruity flavor increases, giving it a more dessert-like feel 😋.

Booze terrorism continues 🥰. ［We moved on from Fukui Yatai Mura to shima&sake&coffee🚶. This time, the master, shima-san, released all the UA collaboration of "Senkou" that he had in stock 😲. We started off with this one, which had been laid up for almost a year 🍶. SENKOU UA Snake Aroma of mellow lactic acid bacteria, a feeling of gaseous gas, sweetness and umami, and a mild aftertaste. In a sense, it has a strong flavor that is not like SENKYO, and is suitable for the power word "Kijoshu no nigori" (nigorizake). The pairing of persimmon and bacon with cream cheese was served. For a while, I was torn between [comfort] and [curiosity], and [curiosity] won. Yamamori 2024 Collaboration of outdoor brand [Patagonia] and [Niida Honke] of [Niida Zenju]. Adjunct time after dinner with in-laws ②. As I was choosing my next saké after emptying the "Yamagata Masamune Natsuno-Junmai", Shima-san recommended "How about this one? I chose this one as my second sake. Ice Breaker Tamagawa Junmai Ginjo Unfiltered Unrefined Nama Sake. This is the perfect sake for this season to be served on the rocks, but it has been sitting in a liquor store for 5 years. ✨️ Shima-san says it tastes great without ice, so we had it at room temperature 😋. Raspberry? It has a matured aroma like berries, smooth taste, slight sweetness and bitterness in the back of the throat, and a full-bodied matured aroma that passes through the nose and finishes with a full-bodied aftertaste similar to whisky. The taste that remains in the mouth slightly softens and softens with water, so if you drink it like a whiskey [one drop], the image may change again 🤔. I drank it at room temperature as it is, but the taste is quite addictive 🥰.

After saying hello, I looked in the cellar to see what to drink and found a bottle sitting in front of me with a sense of déjà vu, so I started with this one 🍶. Yamagata Masamune Summer Junmai. The aroma is a bit tangy and sweet, and the taste is soft and crisp like pears, followed by bitterness and a soft fruity aftertaste. As a matter of fact, the T-shirt I was wearing that day was a "Yamagata Masamune" from the "Sake Collection" I bought at UNIQLO, which was immediately pointed out to me by the master, Mr. Shima.

Zero after-party at Shima before the company's drinking party. After opening a bottle of "Hana-no-Ko", we next ordered a glass of "Hana-no-Ko", which we had decided to order the moment we saw the cellar. Sono Kangiku Pray for 2024 Junmai Daiginjo/Aiyama 40 Nakadori Unfiltered Unrefined Nama Sake. The aroma is mellow and sweet like sugar candy, the mouthfeel is full and soft, and the sweetness is typical of Kangiku, then it finishes with a gentle aftertaste. I am thankful to have found it here as I had lost the chance to drink it 🥰.
