Adjunct time after dinner with in-laws ④. I was very satisfied with "Shishi no Sato" and thought I would end the meal with it, but I couldn't help but be curious about the sake I saw in the cellar! For a while, I was torn between [comfort] and [curiosity], and [curiosity] won. Yamamori 2024 Collaboration of outdoor brand [Patagonia] and [Niida Honke] of [Niida Zenju]. Heavy and heavy with a whey aroma, a smooth umami taste, and a sharp and firm acidity. Almost like a white wine in terms of nuance alone. As the temperature rises, the acidity decreases and the refreshing sweetness increases. I think many people would mistake this for a white wine in a blind test when it is chilled to the perfect temperature. Curiosity got the better of me, but it was an intoxicating experience 🥰. The last drink of the day was Guatemalan coffee! After that, we went to a friend's restaurant that was celebrating its 10th anniversary 🚶. I've been coming to this restaurant almost since it opened, so it's been 10 years already! I drank a "Laphroaig" whisky straight after a long time, and it tasted so good 😋! I've been drinking only sake lately, so I thought it would be a good idea to go back to whisky after a long time 🥃.

Adjunct time after dinner with in-laws ③. Continue with the third drink: ✨️ We rummaged in the cellar again and had this one that caught our attention 🍶. Shishi-no-Sato Junmai-Ginjo Sake Mirai Orikagarami Nama-Shu. The refreshing aroma filled my heart, the gaseous sensation at the mouth, the refreshing sweetness like a lactobacillus drink, and the lingering bitterness with a bit of milky acidity and a bitter taste at the back of the throat. Wow, this is delicious! I had an image that the "lion's village" I drank in the past was dry, but is this the power of [Sake Mirai] 🤔? It was so good that I asked shima where I could buy it and came back to see it later, but it was already sold out😅. I'll look for it again when I go to Ishikawa.

Adjunct time after dinner with in-laws ②. As I was choosing my next saké after emptying the "Yamagata Masamune Natsuno-Junmai", Shima-san recommended "How about this one? I chose this one as my second sake. Ice Breaker Tamagawa Junmai Ginjo Unfiltered Unrefined Nama Sake. This is the perfect sake for this season to be served on the rocks, but it has been sitting in a liquor store for 5 years. ✨️ Shima-san says it tastes great without ice, so we had it at room temperature 😋. Raspberry? It has a matured aroma like berries, smooth taste, slight sweetness and bitterness in the back of the throat, and a full-bodied matured aroma that passes through the nose and finishes with a full-bodied aftertaste similar to whisky. The taste that remains in the mouth slightly softens and softens with water, so if you drink it like a whiskey [one drop], the image may change again 🤔. I drank it at room temperature as it is, but the taste is quite addictive 🥰.

So, if you're going to drink in front of the station, you have to stop by Shima & Coffee & Sake first 🥰. After saying hello, I looked in the cellar to see what to drink and found a bottle sitting in front of me with a sense of déjà vu, so I started with this one 🍶. Yamagata Masamune Summer Junmai. The aroma is a bit tangy and sweet, and the taste is soft and crisp like pears, followed by bitterness and a soft fruity aftertaste. As a matter of fact, the T-shirt I was wearing that day was a "Yamagata Masamune" from the "Sake Collection" I bought at UNIQLO, which was immediately pointed out to me by the master, Mr. Shima.

Zero after-party at Shima before the company's drinking party. After opening a bottle of "Hana-no-Ko", we next ordered a glass of "Hana-no-Ko", which we had decided to order the moment we saw the cellar. Sono Kangiku Pray for 2024 Junmai Daiginjo/Aiyama 40 Nakadori Unfiltered Unrefined Nama Sake. The aroma is mellow and sweet like sugar candy, the mouthfeel is full and soft, and the sweetness is typical of Kangiku, then it finishes with a gentle aftertaste. I am thankful to have found it here as I had lost the chance to drink it 🥰.

After overcoming an unexpected setback, we headed to Shima & Coffee & Sake 🚶. I looked in the cellar immediately after entering the store and chose this one for a cup of sake 🍶. Hana no Kaori Junmai Ginjo Kikka Sweet aroma like a white peach before it ripens, the mouthfeel is against the aroma, the flavor is mellow and delicious, the taste is gentle and sweet, and it finishes with a gorgeous fruity aftertaste, and the last thing that remains is the bitterness on the tongue and throat. For the entrée, we sampled a dish from Takashi's "Watercress soaked in watercress with fruit tomatoes and fresh ginger" that will be served tomorrow 🍴. The sweetness of the fruit tomatoes, the flavor of the fresh ginger, and finally the freshness of the watercress, which is refreshing without bitterness, seems to be a project for tomorrow's "June 6th.

It was almost time for the farewell party, but I decided to have another drink since I had come to Shima, so I ordered a bottle of "Yaman no Kotobuki" which I had my eye on when I first saw the cellar, but then Shima said that the cherry blossoms were in full bloom and that he would open one that he had not served before. I had to order this one. Shinsei X-type My first "X-type" 🎉! Aroma of mellow rice with a little sourness, clear and fruity sweetness and umami, and acidity like No6, followed by a pleasant long aftertaste. Drinking at Shima & Coffee & Sake on New Year's Day I was about to order my last cup of coffee when the master of a local shochu bar came to the bar and after chatting with Shima, he decided to open his favorite drink. Shinsei Amageru First time to drink "Amaeru" 🎉. It has a characteristic aroma, but I can't describe it well. It has a very firm gasiness at the mouth, a sweetness and a soft acidity after the shwash, and a fresh and sweet acidity after the shwash gasiness that goes down your throat. This is delicious. It has a more robust flavor than the Viridian I drank a while ago, but the aftertaste is lighter due to the strength of the gas feeling. The lightness of 8% alcohol and the strong gassiness will surely make you mistake it for champagne if you drink it blind 🍾. I jumped on the Echizen Railway without coffee because I was pressed for time 🚃.

Drinking at Shima & Coffee & Sake in the New Year (3) After comparing "Date Seven", I thought the next one I wanted was "KahayoYoku", a hidden sake announced on Instagram, but unfortunately it was sold out yesterday 😅. Then, let's ask for the one I was curious about when I saw the label. I was wondering what's this on the label 😁. Amezure, Sake Kaiyoshi (Leader of the Sake World) Aroma of rice like a mellow lactic acid drink, gasiness at the mouth, sweetness like a lactic acid drink, and bitterness on the back, followed by a mellow, pleasantly sweet aftertaste, and a slight tightening feeling on the tongue at the end. It's like a Yakult's millege soda. Mr. Shima said it is the same height as a four-pack bottle but has a capacity of 1.5 liters, so it is easy to find a place to put it.

Drinking at Shima & Coffee & Sake in the New Year (2) I have to order this one to compare with "Date Seven Orihime Bottle" 😁. Date Seven Junmai Daiginjo Bokue Style Hikoboshi Bottle Soft and fruity aroma of rice, mild umami and sweetness, and a pleasant aftertaste. In my opinion, Hikoboshi is milder and easier to drink 🤔. The Hikoboshi bottle was the first to sell out ✨.

This year, as is customary this year, we went on a drinking spree while making the rounds to greet the in-laws 😁. I wanted to greet them for the New Year, so I went to Shima & Coffee & Sake 🚶. Takashi-san was there cleaning up for the collaboration event, so we kicked off the evening with an Octopus Wiener and a bottle of Black Label 🍺. Now, let's drink! I went to the cellar and found a bottle that was rare for this time of the year, so I compared them 😋. Date Seven Junmai Daiginjo Katsuyama Style Orihime Bottle It has a cool, slightly pear-like rice aroma, a clean mouthfeel with a fruity flavor and a hint of sweetness that finishes with a punchy alcoholic aftertaste. As you get used to drinking it, the impact fades and the fruity and umami flavors come through, making it easy to drink ✨.

Looking back post 4 in SHIMA The last sake I had at SHIMA was a limited edition sake that I chose because of its powerful typeface. Limited edition Hououmida Hi Hiyaoroshi Junmai Ginjo-shu. The aroma of slightly sweet rice that seems to permeate the scene, the sourness and umami of the mouthfeel, and the sweetness in the background all battle it out for the long, sharp finish. The difference between the limited edition and the regular version is that it is said to be hiki-ired one less time 🔥. To be exact, the regular sake is fire-aged and grated, and then fire-aged a second time right before bottling, but the limited edition is bottled without this fire-aging right before bottling✨. I was led to the limited edition, but it's been a while since I've had a Tochigi Ai 🥰. As I was slowly enjoying my last sake, a waiter from a nearby Okinawan restaurant came in for a midway break and left with a coffee split shochu and a quick bite of cheesecake, which left a strange impression on me 🆒. Looking back post 3) in SHIMA The second drink I ordered after opening "Omine" was this one 🍶. Wakanami Junmai Ginjo Omachi. It had a strong apple aroma with a hint of umami, a slight tartness and umami that caught on the tip of my tongue, a sweetness that I could feel behind it, and a clean and refreshing aftertaste. First time to drink "Wakanami", I think it's the first time to feel the freshness and the astringent feeling that remains at the end 🤔.

Looking Back Post #2 in SHIMA On my way back from visiting my in-laws on a holiday weekend in September, I had some time to spare, so I dropped by SHIMA & Coffee & Sake 😁. It was about an hour before closing time, so let's go quickly and start with a cup of this 🍶. Daimine 3 Grains Summer Jun Kasumi Nama-Nishiki Nama-Nishiki. The aroma of rice with a hint of apple, slight carbonation on the tip of the tongue, and the mouthfeel is light and refreshing, with a slight apple sweetness and sourness that finishes with a refreshing aftertaste. Easy to drink and refreshing 😋. I've never had a "Daimine 3 Grain" at home before, but I finally got it the other day at Shusendo Horiichi in Nagoya ✨. I'm looking forward to opening it now, but it's going to take a while since I have so much in stock💦.

This is a private brand from Kitanishi Shuzo, the brewer of Sairai, in collaboration with Isego Honten, with the concept of "a new sake that Kitanishi has never had before. Wife and kids went back to their parents-in-law's house. I went to visit them but my mother-in-law told me to take it easy, so today I went to my hometown in Fukui for a long time and drank alone. So I decided to go to SHIMA & COOFFEE & SAKE 🚶. One of the seats was empty, so I went in and went to the cellar. When I found this one, I couldn't help but ask for it, so I started with a glass 🍶. Hirotogawa Special Junmai. Fruity yet milky rice aroma, very refreshing and sweet, contrary to the aroma, with a clean and pleasant aftertaste. The impact of the aroma and the gap between the clean taste and the deep aftertaste makes this a bottle that you can drink forever without getting tired of it. This is a very tasty wine. Hirotogawa" is often talked about at Sake-no-wa, and I am not sure if I will drink it at home yet, but I definitely want to repeat this bottle again! The entrée is Camembert cheese in oil seasoned with ishiru and shotsuru (soy sauce).
