Looking back post 4 in SHIMA The last sake I had at SHIMA was a limited edition sake that I chose because of its powerful typeface. Limited edition Hououmida Hi Hiyaoroshi Junmai Ginjo-shu. The aroma of slightly sweet rice that seems to permeate the scene, the sourness and umami of the mouthfeel, and the sweetness in the background all battle it out for the long, sharp finish. The difference between the limited edition and the regular version is that it is said to be hiki-ired one less time 🔥. To be exact, the regular sake is fire-aged and grated, and then fire-aged a second time right before bottling, but the limited edition is bottled without this fire-aging right before bottling✨. I was led to the limited edition, but it's been a while since I've had a Tochigi Ai 🥰. As I was slowly enjoying my last sake, a waiter from a nearby Okinawan restaurant came in for a midway break and left with a coffee split shochu and a quick bite of cheesecake, which left a strange impression on me 🆒. This concludes my look back post 🔚.

Looking back post 3) in SHIMA The second drink I ordered after opening "Omine" was this one 🍶. Wakanami Junmai Ginjo Omachi. It had a strong apple aroma with a hint of umami, a slight tartness and umami that caught on the tip of my tongue, a sweetness that I could feel behind it, and a clean and refreshing aftertaste. First time to drink "Wakanami", I think it's the first time to feel the freshness and the astringent feeling that remains at the end 🤔.

Looking Back Post #2 in SHIMA On my way back from visiting my in-laws on a holiday weekend in September, I had some time to spare, so I dropped by SHIMA & Coffee & Sake 😁. It was about an hour before closing time, so let's go quickly and start with a cup of this 🍶. Daimine 3 Grains Summer Jun Kasumi Nama-Nishiki Nama-Nishiki. The aroma of rice with a hint of apple, slight carbonation on the tip of the tongue, and the mouthfeel is light and refreshing, with a slight apple sweetness and sourness that finishes with a refreshing aftertaste. Easy to drink and refreshing 😋. I've never had a "Daimine 3 Grain" at home before, but I finally got it the other day at Shusendo Horiichi in Nagoya ✨. I'm looking forward to opening it now, but it's going to take a while since I have so much in stock💦.

[The last item I had at SHIMA & COFFEE & SAKE was this one, which had a unique label design that attracted my interest. Kitanishi Sake Brewery Prototype It has a sour grape-like aroma, a sweet aroma similar to the juicy "Sairai" with a hint of white grape sweetness and banana flavor behind the sweetness, and a firm sweetness with a slightly bitter finish. The characteristic aroma of sweetness and umami mixed together and the juicy sweetness that comes afterwards, I think it is better suited for after dinner than during the meal 🤔. This is a private brand from Kitanishi Shuzo, the brewer of Sairai, in collaboration with Isego Honten, with the concept of "a new sake that Kitanishi has never had before. I didn't know you could drink this in Fukui 😲. Now I'm feeling a bit drunk, so I'm moving on to an izakaya for dinner 🚶.

Wife and kids went back to their parents-in-law's house. I went to visit them but my mother-in-law told me to take it easy, so today I went to my hometown in Fukui for a long time and drank alone. So I decided to go to SHIMA & COOFFEE & SAKE 🚶. One of the seats was empty, so I went in and went to the cellar. When I found this one, I couldn't help but ask for it, so I started with a glass 🍶. Hirotogawa Special Junmai. Fruity yet milky rice aroma, very refreshing and sweet, contrary to the aroma, with a clean and pleasant aftertaste. The impact of the aroma and the gap between the clean taste and the deep aftertaste makes this a bottle that you can drink forever without getting tired of it. This is a very tasty wine. Hirotogawa" is often talked about at Sake-no-wa, and I am not sure if I will drink it at home yet, but I definitely want to repeat this bottle again! The entrée is Camembert cheese in oil seasoned with ishiru and shotsuru (soy sauce).

GW Sake Day Part 1 of 5 We drank more alcohol than we had planned so far, and the train was about to leave, so we decided to have a glass of sake that we had decided to finish with after first looking at the cellar 🍶. Yukio Junmai Sake Aizan The aroma is full, sweet, and deep with rice aroma, and while the sweetness of Aizan is strong, the umami is clean and crisp, and the aftertaste fades away while retaining the sweet aroma. I was surprised that it could bring out so much flavor in a junmai sake and differentiate it from regular "Yukio Junmai-shu" (pure rice sake). To be honest, this is the bottle that had the biggest impact on me today 😁. Lastly, we had the usual closing coffee at SHIMA & coffee & sake, today's was Ethiopian. It has a soothing, full aroma, a mild sweetness, and a refreshing flavor and bitterness, making it the perfect cup to sober you up! Now, we're off to meet up with my father-in-law and his family✨.

GW Sake Activity Day Part 1 I was wondering which to drink with "Ohmine", but the other customer ordered "Fried fish with blue cheese" which looked so delicious and the person who ordered it insisted that it should be the signature menu item, so all the customers including myself ordered "Fried fish with blue cheese". Order 🤣 If you ordered the entrée, you should also order the sake, which I was worried about, so I ordered this and we had a drink 🍶. Tenbi Junmai Ginjyo Usu Nigori Nama-zake My first "Momoten" 😁. I wonder what "Amami" will be like after the loss of Mr. Fujioka 🤔. Fruity sweetness with a cemedine-like aroma, slight carbonation and sweet umami on the tip of the tongue, then a sharp and deep lingering taste, and finally a lingering bitterness on the tip of the tongue. The slightly carbonated taste is fresh and goes very well with fried food. [The crispy outside of the fried hanpen and the inside of the fried hanpen is pulled together, and the blue cheese has a peculiar yet delicious salty flavor and aroma that escapes through the nose. No wonder they decided to make this one of their signature dishes✨. And according to Mr. Kazuhiko Ota, deliciousness is propagated 😁.

GW Sake Activity Day Part 1 (3) When I was choosing which to order next, I was forced to choose between two options, and after 3 minutes of deliberation, I decided on this one for the first course. Daimine 3-grain Aizan. Fruity, mellow, sweet rice aroma, sweet taste with a firm umami, bitterness in the throat, and a sharp sharpness from the acidity, and a clean and beautiful aftertaste with a sour astringent taste that lingers on the tongue. On the day of the event, we had invited a chef from outside, so we ordered a light side dish of homemade pickled wasabi leaves. The cool leaf wasabi aroma was pleasant 😋.

GW Sake Activity Day Part 1 (2) [After having lunch at Amida Soba, we strolled around Fukui Station, where many events were held during GW, and finally went to a beer event called "Holiday and Beer" 🚶. However, I gave up on the idea of having a beer because it was a bit too much to drink, so I went to [SHIMA & coffee & saké], which was having a small food event 😁. First of all, we had a drink at this place that has a strong presence in the cellar 🍶. Hanahayo Junmai Daiginjo Arigarami. Aroma of mellow pineapple, sweetness like pineapple with a little sourness on the palate, a juicy yet refreshing umami, and a fade-out finish with a pleasant aftertaste, bitterness lingering in the throat, and a fruity tropical aroma that passes through the nose. Ahhhh, it's delicious!

[Fukui Spring New Sake Festival Additonal Time in SHIMA] This is the last time after a long day 😁. We had a last drink here 🍶. Hanaboe Yamahai Junmai Nama-no-Hara Sake. Apple-like aroma, sweetness on the first sip, then a mild cheese-like matured full-bodied umami and underlying astringency, followed by a sharp finish and a lingering aftertaste that quickly disappears. I was already very drunk, so my notes were only fragmented and I'm not sure if I got it right😅. It's been a while since I drank this much, but I'm very happy to have had so many different kinds of sake in one day 😁. I'll repeat and recheck the ones I'm not sure about in my review ✨ With this, the Fukui Spring New Sake Festival marathon is complete🌸🏃💨.

[Fukui Spring New Sake Festival Additonal Time in SHIMA ①.] After drinking beer with my father-in-law and my father-in-law at Our Brewing, a craft beer brewery in the redeveloped Fukui Ekimae Food Hall Minie, we went to Shima & Coffee & Sake, which was holding a limited event this weekend. I heard that they were inviting outside chefs to open a good selection of sake for the New Sake Festival, so I knew I had to go. Here's one that was barely left 🍶. Shinsei Nirvana Tortoise I thought it would have a miscellaneous taste since it was 80% polished and 80% pure, but it had a supple and beautiful umami, sweetness, and a clean acidic aftertaste. I was surprised that they could create such a great taste without cutting it down. I just wish I could have enjoyed it a little less drunk😅.

Here is what I had for my second cup of coffee at SHIMA & coffee & saké before the company farewell party! Tazake Kojo-zake. The aroma is like ripe apples, the mouthfeel is juicy and full of sweetness and umami, then it finishes with a calm and deep aftertaste, and finally a bitter taste at the back of the throat. Not too sweet, but with a deeper umami and richness, it has an apple brandy/calvados-like taste 🤔. I would rather drink it while relaxing with a movie or reading a book than with a meal. I ordered a cup of Ethiopian coffee to finish off the meal. Compared to the rich taste of "Tasake", I felt the taste of "Ethiopia" was a bit bland, but the refreshing taste was a refreshing drink to get me in the mood for the next day 😋.

After last weekend's unseasonably warm weather, it is now cold and rainy in Fukui ☂. Today was a farewell party for those who are leaving their departments due to personnel changes at the company. I will stay in my current department for the next year, but two of my apprentices who I taught will be leaving, so I am worried about my job after April😅. The venue for the party is not very good with all-you-can-drink Sake, so I went to SHIMA & coffee & saké near the venue to recharge my Sake ✨. Kinjaku Junmai Ginjo Akiaagari. Aroma of mellow sweet rice, a little pear-like? The taste is clean and sweet, with a refreshing aftertaste and a lingering bitterness. In contrast to the mellow aroma, it is not so sweet and easy to drink. The fourth picture was taken when we stopped by Yuretoro in Fukui Yatai Mura, which opened recently after the opening of the Shinkansen bullet train, before stopping by SHIMA. I'm looking forward to seeing a new drinking area in Fukui.

[A day to work on sake activities] in [SHIMA & coffee & sakes] ☕🍶. After comparing the different types of sake from the Hana-no-Kou Sake Brewery, we had the last one from SHIMA ☕🍶. Tasake Tokubetsu Junmai Nama 2023 Shinshu. Aomori-esque apple-like aroma with a hint of woodiness, juicy sweetness and umami on the palate, followed by a refreshingly gentle sweet aftertaste with an apple-like acidity. The sweetness is more refreshing than the "Toyobai" that I drank the other day, and it is a dangerous bottle that can be drunk smoothly without making you feel that it is 16 degrees Celsius. After being satisfied with the sake, we finished off with a coffee that only SHIMA can offer ☕ today's Brundi ☕! The slightly bitter bitter chocolate-like richness is perfect for sobering up 💡. When paying the bill, a donation box was placed at the end of the counter. We left SHIMA with great satisfaction, but in fact, our sake activities are far from over 💦.

[A day to work on sake activities] in [SHIMA & coffee & sakes] ☕🍶. After emptying out the "San-do", the next choice was decided by the master, Mr. Shima, who said, "I have this one here. First "Hana no Kaori" 🎉"Hana no Kaori Junmai Daiginjo Sakurabana". We received the first bottle of the sealed bottle! It has a rice aroma that reminds me of pear, similar to "Sanchi" but clearer and more fruity, a juicy umami sweetness on the palate, a lingering aftertaste that makes you sigh, and finally a strong bitterness that lingers on the tip of the tongue. The accent of the remaining bitterness enhances the umami sweetness of the next sip. Compared to the "Sanchi" which is easy to drink, the "Hana no Aroma" is a more leisurely sipping sake. As the temperature rises, the bitterness fades and the sweetness increases, giving it a more floral flavor. I was very satisfied with the "Hana-no-Kou Sake Brewery" drinking comparison that I never expected 😁. [The sake drinking at SHIMA continues ☕🍶.

A day free to work on my sake activities 🍶 Enjoy soba noodles and sake at YUKAMEAN KAMEYA and take a walk to the station. [I enjoyed soba noodles and sake at "Youkamean Kameya" and took a walk to the station and then took a train to Fukui City 🚃. I wanted to greet the New Year at SHIMA & coffee & saké until the scheduled time ☕🍶. I came to the store after hearing that they had opened the "Nabeshima New Moon" recommended by Aladdin, but Mr. Shima told me that it was sold out in an instant, so I went to the cellar to choose a replacement sake. I went to the cellar to choose a replacement sake. Sansho 2023 Yamadanishiki Ni-no-zozo. The aroma is full and sweet with a hint of rice, the mouthfeel is soft and fruity with a sweet umami, then it finishes with a gentle sweet aftertaste, and finally a slight bitterness lingers in the back of the throat. The pleasantness of drinking flows smoothly through the body. It has been half a year since I drank it at the "Kansai Sake-no-wa Off-line Meeting" in the summer. When I finished half of the bottle, I was told that there was another bottle available today, which was "Hana-no-Kou" from the same brewery, Hana-no-Kou Shuzo. I never thought I would be able to compare "Sansho" and "Hana-no-Ka" at the beginning of the year 😁. Next review

Another day at SHIMA 😊. After drinking "Taido", I ordered a coffee to finish off the day. While I was having my coffee brewed, a couple came in 🚶. I was thinking that this is the best part of the restaurant when I saw the husband sitting next to me and he ordered a cup of hot green tea because he is a driver and the wife ordered a cup of hot muddy sake (MM Spyder). I'm going to have a cup of oizake 🍶. Mibu Junmai Ginjo, which I mistakenly thought was a Kyoto sake from its name. The aroma of apples with honey, the sweetness quickly fades as you drink, and the sweet apple aroma lingers on the nose! Wow, this is as sweet and delicious as apples with honey. I mistakenly thought this was from Kyoto, but it's actually a collaboration between Mibu-cho, Tochigi and Mashidaya, a sake shop, and brewed by Iinuma Brewery, famous for its "figures" and "cedar trees" ✨. I never thought I would experience the love for Tochigi in Fukui 🥰. By the way, the wife I was with later shifted to heated "Kawanakajima Special Junmai Sake" and shared it with me, which was also outstandingly delicious and I made up my mind to order it next time 😆.

At [SHIMA], continuing from last time I was looking around the cellar for what to drink next when I found a bottle of "Denshogiku", which is rare in Fukui, so I had another glass. Taido Junmai Ginjo. The master likes this one so much that he carries it almost regularly 😊. Sweet fruity aroma, umami, acidity, and a sweet aftertaste. The image of the aftertaste is somewhat similar to sweet potato shochu 😁. According to the master, he almost always recommends it to his customers, and it is rare for people to ask for it themselves 😊. If I didn't have sake-no-wa, I wouldn't have gone through with it either😅.

Denshogiku" drinking comparison at SHIMA 🍶. Review of the non-origara-mi Sono Kangiku Denshogiku Junmai Daiginjo Yamadanishiki 50 Unfiltered Nama-shu The aroma is lighter than that of the ogara-mi, the mouthfeel is fruity and sweet, and there is a slight bitterness that lingers at the end after the finish. Impact of ogara-mi, the clear and easy to drink one 😆. We decided to stay longer at SHIMA because there were other sakes we were interested in!
