［We moved on from Fukui Yatai Mura to shima&sake&coffee🚶.
This time, the master, shima-san, released all the UA collaboration of "Senkou" that he had in stock 😲.
We started off with this one, which had been laid up for almost a year 🍶.
SENKOU UA Snake
Aroma of mellow lactic acid bacteria, a feeling of gaseous gas, sweetness and umami, and a mild aftertaste.
In a sense, it has a strong flavor that is not like SENKYO, and is suitable for the power word "Kijoshu no nigori" (nigorizake).
The pairing of persimmon and bacon with cream cheese was served.
The saltiness and umami of the bacon, the sweetness of the persimmon, and the mildness of the cream cheese matched the taste of "SENKYO" perfectly.
