Here is the fourth sake of the mid-part of the event!
Sentori Akatombo
The aroma is tinged with a sourness that is typical of Sentori, and the mouthfeel is moist and umami, with a sharp acidity that is typical of Sentori.
As the temperature rises, it has a slightly fannish sweetness.
Pairing: Apples and prosciutto cream cheese.
The chopped prosciutto ham is also inside the olives, which makes this a difficult dish to pair with.
When paired with "Akatombo", the sweetness of the apple and the flavor of the wooden vat combine to create a pleasant acidity.

I drank "Akatombo" for the first time a while ago at the [Cost Sake Brewery] and was shocked to see that this kind of sake also exists 🥸 I was surprised at the acidity and how unlike sake it was compared to the acidity of the Shinmasa at shima😋.
