Shiina Sake Brewery in Hitachi City
I've heard of this sake but never seen it in Kansai.
I'm not mistaking it for something like FUKUNISHIKI or FUKUMUSUMO.
According to their official website, they have a distributor in Tokyo, and it seems that they also have a wholesaler distributing their sake.
Domestic rice, 65% polished rice ratio 15.3 degrees Sake degree +4 Acidity 1.6

Since all prefectures except Kagoshima and Okinawa are exhibiting at the Kokusyu Sake Fair, our strategy beforehand was to try to get sakes from prefectures we would not normally be able to drink 😀.
However, the first booth we visited was in Yamaguchi Prefecture, and the one facing us was in Nagano Prefecture 🤣.
When I saw Nagano sake, which I love, there was no way I could not visit 🤣.
However, since I was there, I decided to stop drinking the sake that I usually get, and went for a sake that I don't usually drink...or can't afford...and this Junmai Daiginjo from Masumi caught my eye 😀.
I usually can't afford a sake of this price 😅.
I felt a little bit of Yamahai-like nuance in the top nose, but the overall impression was of a clean, easy-drinking sake that went down smoothly😇.
I've only had Masumi sparkling nigori so far, so I had a good impression of my first clear sake😇.
I also enjoyed Comet and Shinshu Maihime, which I hadn't had yet😇.
The new Maihime in particular was described as dry, which is not the type of sake we would normally drink, but the first attack was a big thump, followed by a sweet fruity taste that we would fully enjoy at home 😇. ポンちゃんHi Yasbaye 🐦.

Finally, I went to the Ibaraki booth!
The preliminary list showed only 3 kinds of sake, but when I went there on the day of the fair, I was surprised to see many kinds of sake on display.
Urasato Sake Brewery in Tsukuba City
Mr. Toji of Urasato Sake Brewery was there with his wife!
It was like meeting a celebrity!
They were in Osaka for the second week in a row for an event in the Kansai region.
The president (Toji's father) was also at the event!
I chose a super dry sake, which I had never had before!
Ibaraki booth didn't have any information (or did they forget to give it to me?). So I used the specs based on the internet 😅.
Polishing ratio 55%, Hitanishiki 15 degrees, Acidity 1.2, Sake degree undisclosed
It's dry but has sweetness.
I thought it might be dry because it's super spicy, but it's not.
I can drink this kind of dry sake.
Kiri-Tsukuba doesn't seem to sell outside of the prefecture, but they seem to sell it specially to the crazy salad hall, Tomekawa Sake Shop.

I've seen this sake on SNS for quite a while, but I've never seen it at a liquor store in the Kansai region.

The taste is quite unique. I don't think it has Junmai Daiginjo-like taste.
I was impressed that Nemuchi-san said it tasted like apricots.
I read a review of Sake-no-wa that said it was fruity and sweet, but...

First time at the Yamashiroya Sake Brewery. The brewery is located in Yamaguchi City

The label says "Seller" and says that it is currently not brewed by the company, but produced by Yamagata Honten of Hobo Nagatsuru.

I was overwhelmed by the size and scale of the venue, but I was able to meet up with Eiji-san from Sake-no-wa and we had a great time 😇.
At the booth I visited with Mr. Iji, the brewer asked me if I was with my family ❓... I wonder if Mr. Iji's grandparents saw us 🤣.
First of all, I headed straight for the Yamaguchi Prefecture booth, my hometown 😀.
I looked at the list of participating sake and toasted Kaorin with a Junmai Daiginjo from Kinjaku, which I had been looking forward to since the day before 🍶.
Kinjaku is still delicious... a crisp, robust fruit with a sweet umami flavor that finishes off nicely 😇.
In the end, we stayed for 3 hours yesterday, and the first and closing toast were both by Kinjaku 😇.
