It tastes modern, sweet, and juicy, unlike the image on the label. I thought it was a 4MMP type.

I have bought 3㌥ of Kasen at Yodobashi in the past
I also remember drinking Daiginjo when we went out for a drink.

It is rich, full-bodied, and very drinkable.

Fruity and clean taste with a gorgeous ginjo aroma.
The sweetness is mild.
Yaegiku (matured sake) Junmai-shu
Polishing ratio 70%, Koshihikari rice produced in Akiruno City, 15%.
Sake degree -3, acidity 1.9, 1650 yen
Drink it because of its classic label.
This sake is a reissue of a sake from the Morita Sake Brewery that used to brew in Akiruno City. It is said that they are related to Morita Sake Brewery.
I thought it was an arugula, but it is a junmai sake. I searched for it and found out that it is an aged sake.
It is sweet and round with a strong umami flavor.
The official website says it is out of stock and the next shipment will be after September 2013.
Tamanjutsu is still good.

Koyama Honke Sake Brewery, Nishi-ku, Saitama City
A major sake brewing company that forms the World Taka Koyama Family Group together with Kitashika (Kita-Akita), Yukitsubaki Sake Brewery (Echino Yukitsubaki), Echigo Sakura Brewery, and Kyohime Brewery. Also owns the Nadahama Fukutsuru Brewery in Nada, Hyogo.
Marushin Masamune is a relative of the Koyama Shuzo Brewery in Tokyo, which closed down and is now being sold by the Koyama Honke Brewery.
They also have a factory in Fushimi adjacent to the Kyohime Brewery.
I've seen and drunk sake from the affiliated breweries, but this is the first time I've had sake from the Koyama Honke Brewery in Saitama.
Polishing ratio 50%, domestic rice, 15 degrees, Sake degree +4, Acidity 1.2 990 yen
This sake is only available in Saitama. Released to commemorate the 200th anniversary of the company's founding.
It is quite fruity and easy to drink. It has a sharpness that is typical of Asoe.
However, it has a stable and orthodox taste like a major manufacturer.
As expected, the cost performance is outstanding.
I think the reason why Saitama is the 4th largest producer in Japan is because Koyama Honke Brewery is located in Saitama 🤔.
10 yen per bottle will be donated to Saitama Prefecture NPO fund "Green and River Restoration".
I heard they are competing with Chiba for 4th place, but Chiba also has big companies like Godo Shusei and Takara Shuzo in the prefecture, so I guess that pushes them up in the rankings 🤔.

On the same day, there was a Teimatsu tasting at a liquor store in Kobe.
I thought it was unusual for them to come to Kansai, but I guess it was in conjunction with the Kokusyu Sake Fair?
I've had Teimatsu a few times, but it has a dry image.

Mukou Sake Brewery in Chichibu City
This is another sake that you hear the name but don't see in Kansai
They seem to be producing a sake with a label of "Anohana" (flower).
Polishing ratio 70%, Miyamanishiki, Sake degree +3, Acidity 1.4, 15 degrees, 1,320 yen
It is a classic Japanese sake.
It feels spicier than the sake level. I thought it was suitable for warming up.

I've been wondering about Tochigi Rikishi and his bald father for a while now because of JN's and everyone else's comments, so I've been aiming to close this one from the beginning😇.

After the Kagawa booth, we visited the Mie, Gifu, Nagoya, and Shizuoka booths.
Kaorin and I were drinking without using a spitting cup at all, so we were getting quite drunk and enjoying drinking rather than tasting 🤣.
Now we have landed in Fukui Prefecture in the Hokuriku region 😇.
What was particularly interesting at the Fukui Prefecture booth was the overwhelming number of sake made with Sakahomare rice 😀.
Among them, Bon and Fukuchitoshi, two breweries I have not had yet, had an overwhelming presence 😇.
There was no mundane taste at all, only the umami flavor stood out 😇.

I visited the Kagawa Prefecture booth because I had only ever had sake from Kagawa Prefecture, Sanuki Kuraudai 😀.
The Kagawa booth has a great selection of sakes made with olive yeast 😀.
I don't know if it was the olive yeast or not, but all the sakes were delicious with a fruity sourness, but I especially liked this one because it had the most beautiful sourness😇.
At the end of the tour, I had a chance to talk with the brewer on Shodoshima and I was very interested in his work, so I would like to visit him on Shodoshima someday 😇. boukenNational Sake Fair 2025

A subsidiary of King Brewery, a Hyogo-based manufacturer of mirin (sweet sake) and sake, the Saitama factory of King Brewery is located next to Toa Brewery.
The brewery has a connection with Ichiro's Malt, but it's a long and tedious story, so if you're interested, please check it out 😌.
I've had a young employee's challenge sake called ikou at Yodobashi in the past.
You can also find cheap sake in supermarkets.
