soumachoThe other day, Kami and I went to Ondo-cho, Kure City, located on Kurahashi Island, to eat UDON, and this is the brand we purchased during that trip.
The brewery is located in Kurahashi-cho on the same island.
It is a small sake brewery with a production of about 50 koku, which explains why you don't see it very often in Hiroshima City.

The aroma is fresh and slightly fruity.
It has a slightly dry finish with umami, acidity that is not too assertive, and a soft feeling.
It has a classic, old-fashioned taste, but it was easy to drink and easy to pair with food 😊.
The photo shows the 1st Ondo Ohashi Bridge connecting Kure City and Kurahashi Island, and the 2nd Ondo Ohashi Bridge that opened not too long ago (more than 10 years ago).

If you want to drive to Kurahashi Island, the Higashi-Hiroshima-Kure road runs from the east, so it's easier to get there than in the past 😊.
I recommend a car because it is an island and there is a bridge to the neighboring Etajima island, so please visit there 🌉.

Hayashi Sake Brewery located on Kurahashi Island in Kure City.
The president is both the director of a hospital and the president of a brewery, and it looks like he's been working both as a hospital and a brewery for three generations!
The current president is a businessman who runs a variety of facilities, including nursing homes and lodging facilities, and is a well-known personality who often appears on TV.
He also has a collection of Rolls Royce, kimonos, hanging scrolls, etc. and runs a museum.
With that preconceived notion, I wondered about the sake. I wondered about the sake, but I was intrigued by the fact that they have a toji who has won first place in a series of sake competitions.
He is also a toji at the Kinbundo Sake Brewery in Yamaguchi Prefecture and a test brewer at the Hiroshima Prefectural Food Industry Technology Center.

It's nice once in a while! DaiPurchased at a local supermarket during a trip to Kurahashi Town in Kure City. It is a brand not often seen in Hiroshima City (the fourth photo is a spectacular view from a volcano (hiyama) on Kurahashi Island).
It is made by one master brewer (Toji Hirata) in almost the same way as 200 years ago, in one and a half months, and only 5,000 bottles are made per bottle, which is very precious.

けいけいIt has an astringent and somewhat vintage flavor, and the richness of the unpasteurized sake gives it a dry and refreshing aftertaste. It was delicious with Camembert cheese, but it would also go well with seafood.
I prefer a more robust sake that has been exposed to air at room temperature, so a heated bottle to develop its character would be nice, but I finished the 300ml bottle before trying it.
The sake brewery where the movie "Ginzuru Hashitachi" was filmed. It is nice to drink a classic sake while thinking about sake brewing in Hiroshima. のりたまThis is the first sake from a brewery in Kure, Hiroshima. It is a rather small sake brewery.
