Kinjidake Sake Brewery in Shintotsukawa Town
Hokkaido is full of brands whose names I know but have never seen before.
Polishing ratio 55%, Ginpu 15.0 degrees, Sake degree +3.0, 1380 yen
Seicomart, a convenience store in Hokkaido, carries this sake in their online store.
It's a little classic but refreshing, a little like Kunimare but not as spicy as Kunimare.
Mouthfeel is clean. Slight sweetness is followed by a strong bitterness. The aftertaste is clear and disappears after the umami flavor is gone.
Good as a food sake (to be paired with sashimi, etc.).
Deeply spicy
You can feel the spiciness on the palate, and the spiciness comes in the aftertaste.
Still, it is a good sake that you can feel the umami.
This is my first Kintsutsuki.
It's like a traditional sake.
Considering the wide variety of flavors available these days, I feel that it lacks something.
But it doesn't interfere with the dishes, so I think it's fine.
