Sake purchased in Nara, GW.
This is my first time to buy sake from Nakatani Sake Brewery.
It seems that they have a factory in China and also produce Chinese sake using Chinese rice.
It has a mild sweetness with a slight yogurt-like nuance. There is also a good amount of acidity.
Yamanokami yeast is a type of sasayuri. I've had Yamanokami yeast sake in the past, but I didn't know it was a flower yeast.
I heard that there used to be a raw version of this sake, but I am sure it is delicious.
It seems that this sake is also limited in stock. There was only one bottle left at the store where I bought it.
I heard that they moved the brewery that was closed at the Corona Disaster to the center of town and started a brewery where you can experience brewing.
I wonder if that's why they are discontinuing all of their existing products.

There is a unique sake brewing method called "three-stage brewing" that is unparalleled in the world. After the mother liquor is made, the brewing process is divided into three stages: soe, naka, and tomeme, and the amount of sake to be brewed is increased sequentially. A break is allowed between the "soe" and "naka" stages to allow the yeast to grow. This is called "Odori" and usually lasts for one day. In this product, the odori period is set to two or three days to increase the yeast sufficiently for a strong fermentation. The resulting product has a wider range of tastes and aromas, and a unique flavor.

We visited Nakatani Sake Brewery in Yamatokoriyama City and bought a bottle! The road is a little narrow to go there by car, so I was glad I had my bicycle.
We were introduced to the Yanagimachi Brewery in Yanagimachi, a little further away, where you can experience sake bers and brewing. We hope to visit again next time.
The taste...gorgeous aroma, sweetness and sourness on the palate, and I thought it would be a good choice for beginners.
I was told that they practice a special sake brewing process in which the yeast bacteria are allowed to grow for three days instead of the usual one day (which is also the origin of the name).
I thought that this might have contributed to the deeper acidity and umami. No, it is a delicious sake, yes. ‼️

The balance of sweetness and sourness is superb. ‼️
I bought it after seeing the realization of the sweet and sour fruit-like flavor.
When I drank it, it had a banana-like flavor.
For a moment, I thought it was going to be gentle, but then I realized it was going to be refreshingly sour.
The first day has banana-like sweetness and acidity, while the second day matches the sweetness, richness and acidity.
