I think the only sake from this brewery that can be bought in Kansai is from Masuda Shoten in Sennichimae.

It is said to be watered and fired once.
It is sweet, rich, and heavy.

The brewer, who was standing next to Wakakoma, asked us to have some of his sake as well.

I thought the impression was the same as in the past.
The fire-brewed sake I had in the past felt strange, but this time I didn't feel anything special and enjoyed it.
Maybe it was because I drank mainly minor breweries, but the last two I drank, Wakakoma and Shikizakura, were very different and tasty.
The last one that left a strong impression on me was the Juichi-Masamune 🤔.

Oyama City's Mifuku Sake Brewery
I finally got to try this sake that I've been curious about since the Tochigi Kenmin Kai people posted about it 🤣.
Polishing ratio 50%, domestic rice, 15%, 1683 yen
Sweet but with a classic mouthfeel.
I was surprised to find out that it was a Junmai Ginjo with 50% polished rice. It didn't have that kind of atmosphere at all.
I forgot to take a picture of the worst part💦.
When I asked the brewer if he was from Wakakoma, he said, "You are from Wakakoma, right? He said, "You are from Wakakoma, aren't you?

Kobayashi Brewery took over the business of Ikejima Sake Brewery in Otawara City, which was closed down, and revived it.
I'm so glad I didn't think I could drink this.

As it says on the label, they outsource the production to Yokota Sake Brewery, which brews Nihonbashi in Saitama.

The label says it's 15 degrees though the information they gave me says it's 17 degrees.
It tastes like a junmai ginjo but has a nostalgic flavor like a honjozo. No one else seems to be drinking the same label, so I don't know the specs or other details.
I even had a person from a certain brewery pour me a bottle of this sake, but he was silent the whole time 😅.

Koyama Sake Brewery in Joetsu City
The brewery had decided to close down due to a lack of successors, but Biotech Japan, a manufacturer specializing in plant-based lactic acid bacteria, who was interested in sake production, took over the business and kept it going.
Kakoshika" is a Japanese word meaning "brewer's aroma" in Japanese.

From the label, it seems that this brewery is not brewing at the moment and is outsourcing to Miyake Honten.
