National Sake Fair 2025 Day 2 part70 Gunma (1) Yanagisawa Sake Brewery in Maebashi City I've had a collaboration sake with Machida Sake Brewery before. I think the only sake from this brewery that can be bought in Kansai is from Masuda Shoten in Sennichimae. Polishing ratio 60%, common rice/mochi rice 15.5 degrees, Sake degree -1.0, Acidity 1.4 No.10 yeast, 1210 yen It is said to be watered and fired once. It is sweet, rich, and heavy. I thought it would be a classic hard-to-drink sake, but I like it a lot.

National Sake Fair 2025 Day 2 part69 Tochigi Ai🥰⑧ Junmai Tochigi no Hoshi Utsunomiya Sake Brewery, Utsunomiya City The brewer, who was standing next to Wakakoma, asked us to have some of his sake as well. Polishing ratio 65%, Tochigi no Hoshi 15%, Sake degree +2, Acidity 1.3, 1540 yen I thought the impression was the same as in the past. The fire-brewed sake I had in the past felt strange, but this time I didn't feel anything special and enjoyed it. Maybe it was because I drank mainly minor breweries, but the last two I drank, Wakakoma and Shikizakura, were very different and tasty. The last one that left a strong impression on me was the Juichi-Masamune 🤔. I've already had the brands themselves, so I passed on them, but I was also interested in the Junmai Daiginjo from Nanamizu and Tsuji Zenbei.

National Sake Fair 2025 Day 2 part68 Tochigi Ai🥰⑦ Wakakoma Sake Brewery in Oyama City The brewer was right in front of me, so I felt bad not drinking it, so I did! Polishing ratio 70% Miyamanishiki 17%, Tochigi yeast T-ND T-S 1815 yen It was a Miyamanishiki that I had not drunk at home! It is lightly cloudy, sweet and juicy. It was the best Tochigi sake we had this day! I'm not into Senkori, Hououmida, or Sagata, but I'm not a fan of the famous ones 😅. I forgot to take a picture of it because I thought it was the one I drank!

National Sake Fair 2025 Day 2 part67 Tochigi Ai🥰⑥ 👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻👴🏻 Oyama City's Mifuku Sake Brewery I finally got to try this sake that I've been curious about since the Tochigi Kenmin Kai people posted about it 🤣. Polishing ratio 50%, domestic rice, 15%, 1683 yen Sweet but with a classic mouthfeel. I was surprised to find out that it was a Junmai Ginjo with 50% polished rice. It didn't have that kind of atmosphere at all. I forgot to take a picture of the worst part💦. When I asked the brewer if he was from Wakakoma, he said, "You are from Wakakoma, right? He said, "You are from Wakakoma, aren't you? Of course I know him, we've met at the Hankyu event and the Sake-1 Grand Prix 😁.

National Sake Fair 2025 Day 2 part66 Tochigi Ai 🥰⑤⑤ Kobayashi Brewery in Kanuma City Kobayashi Brewery took over the business of Ikejima Sake Brewery in Otawara City, which was closed down, and revived it. I'm so glad I didn't think I could drink this. Polishing ratio 55% Yumesasara? 1870 yen? I'm not sure of the specs since there are almost no reviews. They're all posted from the Ikejima Brewery days. My impression is that it's a surprisingly beautiful sake.

National Sake Fair 2025 Day 2 part65 Tochigi Ai🥰④ Katayama Sake Brewery in Nikko City There is also a Katayama Sake Brewery of the same name in Fukui that brews Kansai! Kashiwazakari, not Kashiwamori Polishing ratio 65%, Gohyakumangoku from Tochigi, 19 degrees, Sake degree +2, 1950 yen The price is very aggressive for a honjozo! National Sake Fair 2025 Day 2 part64 Tochigi Ai 🥰③ Yoshii Sake Brewery in Sano City. As it says on the label, they outsource the production to Yokota Sake Brewery, which brews Nihonbashi in Saitama. Polishing ratio 60%, domestic rice, 15%, price unknown The label says it's 15 degrees though the information they gave me says it's 17 degrees. It tastes like a junmai ginjo but has a nostalgic flavor like a honjozo. No one else seems to be drinking the same label, so I don't know the specs or other details. I even had a person from a certain brewery pour me a bottle of this sake, but he was silent the whole time 😅. I sometimes come to department stores, but I feel like they're getting saltier and saltier.

The smallest sake brewery in Japan, Kojima Sake Brewery's Kananobi no Sato was already sold out 😭. Morito Sake Brewery in Yaita City! Shoninzawa, from the Japanese reading of the name. They use a variety of flower yeast and I'm interested in this sake, but I haven't seen it before! Polishing ratio 55%, 16%, 1650 yen. The lack of any information on the official website about the rice polishing ratio or the rice used is a little unfriendly😅. Surprisingly sweet, fruity and delicious 😋. I know there was a liquor store in Izumisunagawa that sold it, but I wonder if they still carry it now. I'd like to try their other products! Nice Masamune👍

I heard that the brewery is located deep in the mountains of Kashiwazaki city and not much of it is distributed. Polishing ratio 60%, Gohyakumangoku/glutinous rice, 15 degrees, Sake degree ±0, Acidity 1.3 1,650 yen Echigo Takayanagi is a brand using only rice grown in Takayanagi. Four-stage brewing using glutinous rice. It is refreshing but has a sweet taste deep inside. I'd like to try other specs like raw sake 🤔.
