Go Around It was in the year 2000 that we were able to make a bottle of sake (pressed from the first brewing) that we were satisfied with. The sake was rough but full of potential, and we named it "Ganki" (the name "ganki" refers to the stair-like landing place on the banks of the Nishiki River, and is also associated with the idea of "life being born at the water's edge") to signify a return to our roots and a new start. Only 600 bottles of this junmai were made from a single brewing. He was determined to make sure that only those who could appreciate the taste would drink it and handle it. They gradually increased the production volume and increased the number of stores handling the sake one by one without overdoing it. By gradually expanding the lineup while adhering to the pure rice and no filtration using activated carbon, the world of Ganki was brought into focus and the circle of supporters spread nationwide, and the brand was recognized as a brand. The volume of shipments eventually surpassed that of Nishikinohomare, which had been the representative brand, and now almost all of the company's sake is made from GANKI.
