Abe, which I want to drink regularly. Pink label. The supernatant without mixing at first. Uma beautiful. The flavor and acidity are refreshing and spring-like. When you mix the oli, the slightly cloudy liquid and the slightly gassy mouthfeel from the mixing help to balance the complex flavors perfectly. You can drink it all the time.

Cherry blossoms have bloomed, so it's Hanami Lomang. Sake, like Japanese food, is a great way to experience the seasons. Hanami Romain is low-alcohol and easy to drink. It has a refreshingly mellow and mild taste with no corners. In the worst case, it is featureless and some people may feel it is lacking, but it is a beautiful sake that leaves no room for the cherry blossoms to play the leading role. It would be great if you could drink it while watching the cherry blossoms.

This is one of the ones I wanted to try. It seemed to be the last lot of this winter, so there was more oriki than usual. The supernatant is like champagne, with fine bubbles and acidity, and when mixed, it becomes silky like calpis, with the added flavor of rice. It is 13%, so it was easy to drink and ran out quickly.

I opened my stock of sake all at once on Sake Day, so I spent the weekend at the liquor store looking for a great sake that I had been curious about! At Tatsumi Seishakudo, we got Kushira Junmai Ginjo Yamadanishiki, which we had been curious about on Twitter! This is a Junmai Ginjyo Nakadori Unrefined Nama-shu, which is a brand of sake brewed only with Yamadanishiki produced in Kushira, where the brewery is located, and named "Kushira" by Chiyo Shuzo in Nara Prefecture, which is famous for its Shinomine! It was a very fresh, fresh, pear-like sweetness and minerality, just like an unfiltered raw Yamadanishiki sake! It can be drunk with a meal or on its own. Rice polishing ratio: 50% (all Kushira-produced Yamadanishiki is used) Alcohol content: 16%.

Shinsei NEXT5 COLORS at Tatsumi Seishukudo The bottle is brewed with Akita Prefecture's sake rice, "Koudou Shinkou," which is the same rice used for Cosmos at Shinsei Sake Brewery. The taste, however, was quite different, with a refreshing green apple-like sweetness and crisp acidity! I would have bought it if I could, but that's a difficult thing to do...but I'm glad I got to taste it in one piece!

When I heard about the arrival last week and stopped by that evening, it was sold out... I heard that it was scheduled to be restocked again, so I visited the store early the next week and managed to get one! Last time I enjoyed the Tatsumi Seishukudo's limited edition white one, so I'm really looking forward to the silver one this time! When I opened the bottle, I could smell the slight aroma of muscat? White grape type fruit aroma The sweetness and minerality spread in the mouth as you take a sip, while the pleasant acidity quickly finishes it off. It was so delicious that I don't think there is anyone who doesn't like this taste. Rice polishing ratio: 55 Alcohol content: 15%.

Igarashi Junmai-shu, Yamahai-brewed, unfiltered, raw sake, direct pumping, which I had noticed on Twitter from a liquor store I have been visiting for a long time. I had never had the chance to meet the sake shop in Hanno City, Saitama Prefecture, but I finally did and was able to purchase it! When you open the bottle, you can hear a nice little sizzle! It has a faint aroma of green apples, and when you take a sip, the sweetness, umami, and acidity softly unite into one, and then it is sharply cut. This is my favorite flavor! Rice polishing ratio: 65 Alcohol content: 17%.

We received Tsuchida Shuzo's research brew DATA.24 Active nigori. I was in love at first sight with the rich nigorigo that could be seen from the bottle's appearance, and bought it. I imagined a very fizzy feeling from the perforated crown, but when I opened the bottle, it took about 5 minutes to open the bottle! It took me about 5 minutes to open the bottle. When I immediately drank it, it was pure white and thick like melted vanilla ice cream! The top aroma was of sweet rice, but it gradually faded away with a fresh acidity and bitterness like grapefruit. Rice Polishing Ratio: Koji rice 90%, Kake rice 90% (Polishing ratio: 85%, 70%, 60% is used in the four-stage process) Alcohol content: 16%.

We received "Abe White", a private brand of Tatsumi Seishudo in Abe✕ Tatsumi Seishudo. I am always tempted to buy a bottle when I am offered a limited time offer, a once-a-year shipment, or a limited number of bottles, but this was one of the bottles that I felt hit the jackpot! The top aroma is modest, but when you put it in your mouth, it has a gentle yet gorgeous aroma and a beautiful sweetness that quickly fades into a refined taste. It does not interfere with food, so there are many ways to enjoy it. Rice polishing ratio: undisclosed Alcohol content: 15%.

While strolling in Ginza, I found a liquor store and got a mini bottle of Tsuchida12! I have been curious about Tsuchida's series, but have not been able to try them, but this year they started selling a 300ml mini bottle! Soon after I found it, that night we compared tastes! The low-alcohol Tsuchida 12 was a low-pasteurized bottle with a refreshing acidity. Despite its light alcohol content (12%), its flavor and extended acidity made for a great drinking experience. I ended up testing positive for corona and GW was marred.... I'm still a little under the weather, but my sense of smell is pretty much back, and there's nothing more to do, so I quietly opened the bottle. This year, I missed out on the Abe Pink, so I was determined to try the Green, so I snapped it up right after it went on sale and got it. I can smell lactic acid and rice aroma, but it seems mild, maybe because my sense of smell is still weak? The gasiness is strong. Gentle sweetness and refreshing acidity. Very elegant and surprising. In the second half, I felt a weak bitterness, but it was immediately sharp. The lingering taste is astringent. I'm not in perfect shape yet, so my assessment is a little dubious, but it was soooo good! It has a nice aroma of rice, a clean sweet acidity, and a perfect balance of drinkability and lingering taste. Let's put it in the top 5 of this season.

Personal Evaluation ★★★☆☆☆ Only a few more days left on my sake tour around Japan... Today, we will have a sake from Kagawa Prefecture✨. Quite a unique cup 🍶. It has a strong acidity, and I don't think it has the sweetness or bitterness that is typical of sake... I guess I should think of it more as a lactic acid drink than a sake 😀. I guess there are different tastes... Evaluation Criteria ★★★★★ Favorite Hall of Fame ★★★★☆ Delicious! I would recommend it to others It's good. Different tastes Not so good. Re-drink to confirm ☆☆☆☆ It's not for me. unlikely to drink again

It's been a while since I've been to Abe. It's my first time in yellow, so I'm looking forward to it. Aroma of citrus and lactic acid. My favorite type. On the way, the aroma changes to that of rice. More gassy. The sourness comes first, followed by the sweetness. Both the sweet and sour flavors are strong, but the fact that it doesn't become unpleasant at the very least is as expected. The sweetness and acidity continue until the aftertaste, and a weak bitterness lingers at the end. A nice finish. Even though the sweetness and acidity are strong, it is well balanced and can be enjoyed until the end. It's a flashy sake, but a good one. I'll have to buy the pink one.

Hops and Doburoku 01: Sasanishiki" from Rice and Agave. I opened one of the most talked about bottles. It has a strange aroma of rice, muscat, and citrus. The aroma of hops is nice. The gasiness is quite strong. Mainly acidic. The rice flavor is quite strong, and it starts to feel more and more like sweet sake. Towards the end, the sweetness increases at once. The aftertaste is mostly sweet. The sharpness is not good. This is a very ambitious work, and it is certainly a sake that I have not had very often. However, it was probably easier to drink than To'o no Doburoku.
