Kumakichi
We received Tsuchida Shuzo's research brew DATA.24 Active nigori.
I was in love at first sight with the rich nigorigo that could be seen from the bottle's appearance, and bought it. I imagined a very fizzy feeling from the perforated crown, but when I opened the bottle, it took about 5 minutes to open the bottle!
It took me about 5 minutes to open the bottle. When I immediately drank it, it was pure white and thick like melted vanilla ice cream!
The top aroma was of sweet rice, but it gradually faded away with a fresh acidity and bitterness like grapefruit.
Rice Polishing Ratio: Koji rice 90%, Kake rice 90% (Polishing ratio: 85%, 70%, 60% is used in the four-stage process)
Alcohol content: 16%.
