Aroma: More acidity, fresh impression As the aroma suggests, it has a strong acidity and is refreshing! It is like a sour apple. When you swallow it, you can feel the weight of the rice aroma! This was the first time I drank Hwasong, which was recommended to me at Mizumoto Sake Shop, but I am already hooked on it! PS: I repeated one more bottle after this!

I left home a little early for a company drinking party today and plunged into real-time drinking activities 🥰. In the morning, I worked up a sweat at the gym while doing household chores, and then went to Fukui Station near the venue early enough to stop for lunch to replenish my protein. I went to Matsumoto Shoten, a yakiniku restaurant in the Fukui Yatai Mura (Fukui Stall Village) that opened in conjunction with the opening of the Shinkansen (bullet train). After quenching my thirst with Akahoshi, I found a bottle at Mizumoto in Fukui Station on my way to Shima that I couldn't miss, so I stopped by 🤣. Kuroryu Hiiraju. The aroma is sweet and mellow like melon even from a distance due to the large mouth of the glass, and the bitter taste behind the clear umami and sweetness on the palate quickly fades to a sweet aroma on the nose and a firm bitter finish. I have not had this sake in 20 years 🤔. The 4th picture is a little yakiniku (grilled meat) at Matsumoto Shoten.

The expensive one of Ippongi! I've never drunk anything higher than Jungin before because I've always had a bit of a problem with Ichihongi. The aroma is quite gorgeous and sweet! The sharpness is still there, but I'm surprised that this kind of sake is also available. It is delicious, with no cloying taste, and the Fukuro-hozuri (hanging in a pouch) technique really comes to life! The fact that the brewery's highest-grade sake is Sakahomare instead of Yamadanishiki is also a good sign of the consistency of the philosophy.

Ten days have passed since the beginning of December, and there are only three weeks left in this year. 😮‍💨 Now, looking around the cellar, there are some sakes that I have been waiting for the right moment to drink, but I realized that I have put them away for a long time, so I decided to drink them while they are still available. Abe Junmai Ginjo Nama Sake I bought it in early spring and it has been sitting in the cellar for a long time, but it was originally bottled last October, so it has been sitting there for a whole year 🤣. [Gugumi-nomi.] Aroma of sweet and mellow rice, strong gassy feeling at the mouth, strong sweetness of rice, deep, long and pleasant aftertaste, and sweet aroma that escapes through the nose at the end. Trip time: 40 seconds [Mokkiri] Cool and sweet rice aroma, strong gassy sensation on the tongue, followed by a long and pleasant aftertaste with a strong sweetness, and a sweet aroma lingering at the end. Trip time: 26 seconds The entrée was locally caught sashimi of round horse mackerel and sashizaki-zakari (sashimi). The 4th picture is the top of the local mountain [Mt. Hino] has turned white or 🏔️ the lower part of the mountain still has autumn leaves! [Hinoyama is also known as Echizen Fuji in the Echizen City area of Fukui Prefecture, where Murasaki Shikibu lived away from Kyoto for the only time in her life.
