Visited a sake brewery with his wife on a tour of the Hokuriku and Kita-Kinki regions.
Purchased the sweetest sake recommended to me as it was the sweetest sake but had a nice sharpness. It was my first experience of sweetness and sharpness. I rarely drink regular sake, but it was a limited quantity of raw sake, and the taste was a memorable part of the trip. The alcohol content is not written but I think it is quite high ^_^.

Torihama Sake Brewery is located in Wakasa-cho, Mikata-Kaminaka-gun. Representative brands are Torihama and Kamoei.
◉Torihama Junmai Daiginjo
The aroma is fruity and mineral, with less sweetness than expected.
I asked Bouken if he had seen the label anywhere, and he said it looked like the shochu "Torikai," and indeed it was!
The story of the brewery is interesting. The brewery was founded in 1920 by 50 townspeople in Wakasa. Mr. Yasuhiko Kobori, the current 5th head brewer, was originally an office worker and engineer. He took over the family business after the sudden death of his predecessor, and at one time considered closing the business, but resumed brewing sake in response to the passionate wishes of the local residents and shareholders.
So the brewery is loved by the locals.

Torihama itself is sold at KITTE, but you can't find this sake anywhere else.
I've always thought the logo looks a bit like Torikai, a shochu 🤔.

The third sake I chose was from the Torihama Sake Brewery, which brews sake on the banks of the Mikata Goko (five lakes) in the Reinan area of Fukui.
Torihama Junmai Ginjo
Sweet fruity aroma, light umami, impactful bitterness, and a clean finish.
Some time ago, when we were talking about the fact that there are many sake with "Kamo" in them (Kamotsuru, Kamonishiki, etc.) and it is hard to know which sake is which, we were told that there is also a sake called "Kamoei" in Fukui!
The brewer of "Kamoei" is this "Torihama Shuzo". I was impressed by the fact that they posted on SNS that they were selling Junmai Daiginjo at half price because they had no money to buy rice to make sake last year, and I wanted to try it once 😁.

When it is cooled down to a crisp, the crisp acidity and soft rice flavor and sweetness spread in the mouth.
