Like a Bayarese orange.
Refreshing but with a mellow aftertaste ^ ^
It may go well with sashimi, vinegared food, carpaccio. ☺️🐙
I wonder if this kind of sake is often made in areas with good fish 🐟.
Too bad today's snack wasn't fish 🐟.
[Fukui Spring New Sake Festival (3)
The third sake I chose was from the Torihama Sake Brewery, which brews sake on the banks of the Mikata Goko (five lakes) in the Reinan area of Fukui.
Torihama Junmai Ginjo
Sweet fruity aroma, light umami, impactful bitterness, and a clean finish.
Some time ago, when we were talking about the fact that there are many sake with "Kamo" in them (Kamotsuru, Kamonishiki, etc.) and it is hard to know which sake is which, we were told that there is also a sake called "Kamoei" in Fukui!
The brewer of "Kamoei" is this "Torihama Shuzo". I was impressed by the fact that they posted on SNS that they were selling Junmai Daiginjo at half price because they had no money to buy rice to make sake last year, and I wanted to try it once 😁.

Sweet and gorgeous ginjo aroma with a hint of sourness
When it is cooled down to a crisp, the crisp acidity and soft rice flavor and sweetness spread in the mouth.
As the temperature rises, the overall cohesiveness improves.
On a trip to Fukui, we stopped by the Torihama Sake Brewery.
This is the second time I have visited the brewery.
The chimney is magnificent and quaint.
This is Torihama's Junmai Ginjo.
There is no description on the label, but the rice used seems to be Gohyakumangoku.
The rice used seems to be "Gohyakumangoku" (five hundred million stone).
There is a ginjo aroma on the nose.
It has a sweet, ricey mouthfeel.
The taste is not beautiful, but firm.
It is not modern, but it is not classic either.
It has a local, local sake feel to it.
The taste is also very pleasant.
It has a light matured taste due to being left at room temperature for half a year. The sweetness and umami characteristic of Torihama spreads. It has a lingering aftertaste, but it is relatively light for its richness. The sweetness stands out when the sake is lukewarm, but when it is warmed up, it is smooth and tasty again.
One year aged Hatsushibori. The sweetness is typical of Torihama, and it is good. If you like it, you may like it. I would like to match it with Chinese food.
