This sake is made by Kamoizumi in Saijo, Hiroshima.
It is only sold at the brewery, so we obtained it locally.
It is a clear sipper with 100% Yamadanishiki from Hiroshima and 50% polished rice.
The ginjo aroma on the nose when it hits the palate is sweet, but it is followed by a firm, uncluttered, dry aftertaste.
It would be interesting to drink it with a wide or narrow-mouthed boar's mouth to feel the difference in flavor.
