Sake yeast is the best in the world, and it is possible to make sake with more than 20% alcohol. However, Japanese people are said to get white patches on their throats if the alcohol content is over 20%, so this is just barely possible. Wine, Shaoxing sake, and makgeolli become inactive with the alcohol they produce at less than 16%, but sake can go above that. If it exceeds this level, it is usually diluted with water and is fire-quenched for sterilization and to stop yeast bacteria.
