ABE/Junmai Daiginjo/Koshikagura/Hi-iruyu Unpasteurized Sake/2022-2023BY 4.0 An "orthodox" Junmai Daiginjo. It is a Junmai Daiginjo quality that other brands would charge 5,000 yen class. Personally, I think the proof of a brewery's high level of quality is Junmai Daiginjo fire-brewed sake. The yeast used is "Niigata Prefecture yeast G9" and the sake rice is "Koshigaraku". I hope they will spread the Kashiwazaki terroir and domaine. Fruity sake with a luxurious taste. It is an "orthodox" sake, not unlike the Abe brand. Low acidity and bitterness. The temperature must be minus 5 degrees Celsius. At room temperature, it does not show its potential as a Junmai Daiginjo. It is tasty, but since it is an Abe, I thought it could have a little more impact. It is so simply delicious that if you drink it blindfolded, you may not even notice it is an Abe (laugh). It might not have been a good idea to drink Firstcass first. The price is 3,300 yen, so it is one rank higher in terms of price, so I gave it a dry evaluation. Compare with Abe Green. I was deeply moved by the fact that it will be unavailable in a few years. The other day at the sake festival, Abe was the only exceptionally popular sake. I must drink it while I can (laugh).

We are indebted to the natural hot spring near the rice fields in Yamagata where Sake Mirai is cultivated. The mouthfeel is full of minerality and remains easy to drink, while the lingering bitterness of the rice has a wonderful sharpness. Sake beginners may be a little put off by the bitterness. It is best served as a food sake with izakaya food. This is a sake that will appeal to the sake connoisseur. The lingering bitterness is very interesting and sake-like. The temperature is -5 degrees Celsius. At room temperature, the bitterness of the rice is too much. The price is 1,898 yen for a junmai daiginjo! Sake that should be promoted more widely. It should be able to broaden the range of sake lovers. We will continue to challenge to develop the Eiko Fuji brand.

However, it is also true that it is a step lower than ogara-mi from other famous sake breweries. KANGiku OCEAN99/Junmai Ginjyo/Kukai-Inflight/once-fired, unfiltered, unpasteurized sake 3.0 The challenge to conquer OCEAN99 every season. The first time I drank "Nagi" was too delicious. Because the hurdle of "Nagi" is too high, the expectation level is inevitably raised. It is a "summer sake (unfiltered unfiltered sake only available in summer)" and I want to drink it cooled down to a crisp. The minerality on the palate and the good balance should be easily accepted by anyone. Since it is a summer sake, the aftertaste is also refreshing. However, although it is delicious, it lacks punch due to the fact that it is a summer sake. The heat treatment may have affected the taste, but I would like to see more acidity and gassiness. I have been drinking mainly nama sake and orikarami sake recently, so this is a big reaction to that. The cost is the strongest at 1,595 yen. Almost the same amount as the cost of cool delivery (lol). ocean99 will continue to be a seasonal purchase for me. Personally, I would like to see a "yokozuna" level placement of standard sake that is not seasonally related, like Jyushiyo's Honmaru.

Hououmida/Junmai Daiginjyo/Arabesugi Oshikiri Merger/Yamadanishiki 30%/5%/Unfiltered Nama-Shu 4.5 The taste is so good that it makes you roar. The best of Hououmida. 2,200 yen for a 35% polished Yamadanishiki Junmai Daiginjo from the Special A district? Isn't that the wrong price? This is at the level of 5,000 yen class junmai-ginjo. I bought it without any prior knowledge, but I was right. It has a mellow, fruit-like aroma with a strong minerality. The lingering taste of the rice is amazing, due in part to the fact that it is made from Yamada-Nishiki from the "Tokubetsu A" district. No other sake can produce this umami. The Kobayashi Sake Brewery, which upholds the concept of "terroir," has taken it to another level by using the best Yamada-Nishiki. However, the balance between "Arashiri" and "Oshikiri" is exquisite. This was the first time I drank a blend. It is a sake that can also be enjoyed at different temperatures. It is quite tasty at room temperature, but I personally like to enjoy it at temperatures between 0 and -5 degrees Celsius in a wine glass. I will definitely buy it again next year.

Oze no Yukidoke / Junmai Daiginjo / Shungin Limited Edition / Nama-Zume 3.0 We visited a local brewery to purchase this sake. The price is surprisingly low at 1,600 yen despite being a daiginjo. Other sake breweries would have priced it at 3,000 yen. It is very easy to drink with a fresh and light taste, while retaining a refreshing acidity. However, it is also true that it does not have a prominent impact. It is too fresh and lacks the umami of rice and lingering aftertaste. Five years ago, this sake would have definitely made a lot of noise. Personally, I think there are too many good sake now. The level of sake has gone up too much in comparison. As a food sake, it is very good. It can be paired with anything, Japanese, Western, or Chinese. Personally, I find it interesting to match it with machichuuka, which is a place with strong flavors, because there is a gap between the two. I love Oze's melted snow, so I would like to explore different brands in the future.

Hirotogawa / Yume no Kaori / Junmai Ginjo / Unfiltered Nama Sake 4.5 Delicious, too delicious. It is a pity that it is not released all year round because it is a draft sake. It is the quality of Fukushima prefecture, the birthplace of unfiltered nama-genjo-shu. The level of sake in Fukushima might be the best. The label is austere, like Jyushiyo. Not for room temperature, it needs to be cooled down to the perfect temperature to be enjoyed. Despite the fact that it is a junmai ginjo, it has a great cost performance at 1,815 yen. Compare Hirotogawa with Tokusen Junmai. The ultimate food sake match-up. The level is one step higher. The aroma and mouthfeel are mellow due to the fact that it is a pure sake. The acidity and umami spread dramatically in the mouth. This is the "ultimate izakaya sake" that Hirotogawa is aiming for. It should be paired with simmered fish. This year, I lost the battle and could not buy it. Hirotogawa sake comparison. This is delicious. It is a sake that should be appreciated more. Also, it is surprisingly priced at 1,540 yen. This is not a sake that can be purchased at this price. The mouthfeel is refreshing, but you can feel the fullness of the rice flavor like a fruit. This sake is attracting attention as a young brewer's toji, but even ignoring the buzz, it is a sake that can be enjoyed by all. It has a really good balance. The lingering bitterness in the aftertaste is exquisitely balanced while retaining the umami of the rice. Room temperature is not bad as it increases the lingering bitterness of the rice. The "assemblage" of sake rice is a factor. As the description says, it "combines the rich umami of Yamadanishiki with the sharp and complex flavor of Akaban Omachi. Personally, I thought it would blur the lingering flavor of the rice. This is because I have a similar impression of "IWA5," a high-end sake from Toyama, although it is an assemblage. However, the assemblage is interesting when considering the future possibilities of sake. I have great expectations for the infinite combinations of sake rice made by talented sake brewers. My impression is that it is delicious but lacks impact. The level of demand for Kangiku brewery has been raised to a higher level. I would like to see a friendly competition with Ocean99, another brand. It is inevitable that both brands will become very popular! I want to drink them all while I can.

Shinshu Kamerei/Kasai City Yamadanishiki/Junmai Ginjo/Unfiltered Nama-shu 4.5 This is the first purchase in the same Nagano sake shop expedition. Shinshu Kamerei is the first sake to be compared with three other famous brands. The comparison of three brands at the same time is a happy place. Needless to say, Shinshu Kamerei is the best of the three. Among the three brands we compared, Shinshu Kamerei has the most amazing rice flavor. The Hyogo Yamada-Nishiki is a masterpiece. Kasai City is slightly far from Yoshikawa and Tojo, but it is a "special A district neighborhood". There is nothing tricky about it, and as the label says, it has a great "mellow umami. You can rather feel the umami of rice at room temperature. Since most sake these days is biased toward acidity and gassiness, this kind of lean sake should be appreciated more and more. It can increase the number of sake fans. However, there will be few people who can purchase it because there are many ardent fans (laughs). Shinshu Kamerei's label is not tricky, which is one of the reasons why I love it. To the brand's strength of "frugality" that does not conform to the trends of the times.

Shinshu Kamerei/Inakura Tanada Hitogokochi: Junmai Ginjo/Unfiltered unpasteurized sake 5.0 This is the first purchase in the same Nagano sake shop expedition. Shinshu Kamerei was the first sake purchased during the same Nagano sake shop trip. We also visited a terraced rice field that we happened to pass by. We enjoyed the Okazaki Sake Brewery, the pride of Ueda, and the terraced rice paddies of Tanagura as much as we could. We also stayed at the Route Inn (originated in Ueda) and contributed to the economy of Ueda City in both food and sightseeing (laugh). A brand that develops only locally? Terroir" is really important to value locally in this way. Ueda City is a really nice place. Minerality as always, with a strong sense of gas as it was freshly made in March 2023. It also has a great lingering rice flavor. It is simply delicious at room temperature. It is a perfect food sake. It does not have the impact to make you roar, but it is really well-balanced. If you remove the useless things from sake like a sculpture, you will end up with this sake. The bottle design is also cool. I was able to use the bottle as a light bulb at the brewery's store. Happy to buy it.

Shinshu Kamerei / Hitogochi / Junmai-shu / Unfiltered Nama-shu 4.5 The first purchase of Shinshu Kamerei in the Nagano sake shop expedition. I was lucky to get three brands. I am a lucky person (laugh). It was a matter of miraculous timing. I thought I would be able to buy it easily in my hometown, but I was wrong. The special distributors were also sold out on the same day. The difficulty of obtaining it has completely changed to "Jyushiyo. It is simply delicious. It is really easy to drink and you can feel the minerality. It is really fresh. It doesn't insist on the acidity and gassiness that are so popular now. On the other hand, wine lovers may find it lacking. A perfect food wine. It definitely deserves to be in the top class of food wine. Personally, I think it is best to savor it with a sense of relief at about -5 degrees Celsius. I would like to match it with sushi or kappo. And at 1,540 yen, it is truly excellent in terms of cost performance. I am looking forward to the miracle of meeting you again. I assure you that I will never resell such a precious sake.

San-no-Sozo 2022 Yamada-Nishiki Raw Wooden Oke Brewing 5.0 Full score rating. I also gave a perfect score to Ninojo, so I have to add 0.5 points (lol). The regular price of 2,480 yen is too high. Other than the packaging bag, are the bottles the same design? I love the fizzy feeling when the bottle is opened. It is 500 yen more expensive because it is a wooden vat. However, the premium and added value is well worth it. The lingering aftertaste, which is hard to describe, shows the depth of the wooden vat. This is a mystique and affinity that cannot be created by mass-produced sake breweries. First, there is a strong sense of effervescence, a refreshing gaseous sensation reminiscent of champagne. Then, after enjoying the soft acidity and fruity taste, there is a lingering rice flavor. However, it should be stored in the freezer 30-60 minutes before drinking, and a glass of wine is essential. San-no-kun brewed with "Yamada-nishiki from the Kikuchi River basin," "Namo Hashimoto" and "Wooden Oke Brewing. This is the highest quality brand from the area of production. Limited edition of 5,500 bottles available nationwide. Compared to the limited FirstClass 240 bottles at the Abeno Sake no Jin, there is plenty of room to spare! but resellers are really unforgivable! Abe Junmai Daiginjo FirstClass (direct pumping) Sake-no-jinjin Limited 4.5 This is the best Abe sake I have ever had. I know this because I have experienced the various Abe lineups! It was worth standing in line for a total of 90 minutes at the sake camp to buy it. I had actually bought and drank it at the main store's purchasing department when the Sake Festival was cancelled in 2020, but this time it tasted even better. Because of the high price, I thoroughly prepared the temperature and sake equipment in advance (lol). Very delicate balance of acidity, umami, and gasiness is maintained. The aroma is also fruity and gorgeous. The sweetness of the orikara is controlled by the soft acidity. Women and foreigners who are beginners to Japanese sake will fall in love with this. The 14% alcohol content is also easy to drink. Abe really has a wide range of flavors. I would definitely like to conquer all the brands. It is the best First Class and goes well with sushi, Japanese food, French food, and everything else. Some restaurants shy away from pairing with Abé because of its strong acidity and gaseous taste. However, FirstClass is the best as a food sake. It is inevitable that it will go well with a variety of meals. However, since it costs 6,000 yen, I will refrain from giving it a perfect score from a cosmetic point of view (laugh).

GINKAI - Departure - Unfiltered raw sake, sake brewer's rice, junmai ginjo 3.5 We purchased "Aomi" and "Ginkai" at the same time at a somewhat premium price at an online sake store. Season, it is a general rule not to purchase at anything other than the regular price. The regular price of Ginkai, 1,595 yen, is a shocking cosmetic price. It is the first new sake. I would like to pair it with sashimi from the Sea of Japan, such as the fatty cold yellowtail. I personally paired it with oyster kimchi, which was exquisite. However, it is far from the impact of "Nagi" which I drank for the first time. Perhaps it was because the time had passed and the gas was too thin. Looking forward to the April release of "Kukai!" Easy to drink! A supreme food sake. Definitely a sake that goes with everything. It should be appreciated more. Great cost performance. I emptied a four-pack bottle by myself in less than an hour (laugh). I went into my usual liquor store, but they did not have the sake I was looking for, so I bought it with the last bottle I had. I had visited the Manotsuru brewery before, so I thought I was being conservative, but it turned out to be even better than I had imagined. It is a really fruity sake. The subtle hint of fruitiness is irresistible. Personally, the acidity is lacking. There may be many objections, but I would like to try it paired with Chinese food that has a strong acidity.
