We visited a local brewery to purchase this sake. The price is surprisingly low at 1,600 yen despite being a daiginjo. Other sake breweries would have priced it at 3,000 yen.
It is very easy to drink with a fresh and light taste, while retaining a refreshing acidity.
However, it is also true that it does not have a prominent impact. It is too fresh and lacks the umami of rice and lingering aftertaste.
Five years ago, this sake would have definitely made a lot of noise. Personally, I think there are too many good sake now. The level of sake has gone up too much in comparison.
As a food sake, it is very good. It can be paired with anything, Japanese, Western, or Chinese. Personally, I find it interesting to match it with machichuuka, which is a place with strong flavors, because there is a gap between the two.
I love Oze's melted snow, so I would like to explore different brands in the future.
