Toyo Bijin Limited Junmai Ginjo
Jyundo Isshu Series - Sake made with Sake Mirai as the Kakemai
Dark but gentle sweetness! Pineapple? Peach? The aftertaste is refreshing, easy to drink, and delicious!
Suzukagawa, Tokai area Aeon affiliate only
Suzukagawa S Junmai Ginjo
Slightly sweet fruity aroma. Maybe lychee.
Sour astringent taste with a clean aftertaste. The alcohol is moderate and easy to drink. Delicious sake with few peculiarities.
A little bigger than a wine bottle, a little bigger than a four-pack.
It is said to have undergone a renewal in 2024.
The one I drank was before the renewal.
Junmai Daiginjo from Suzukagawa
Slightly sweet pineapple-like aroma. The aftertaste is umami but clean. The astringency may be less than that of Junmai-Daiginjo. It is also easy to drink with a moderate alcohol content.
I think I will be able to finish the standard lineup of Suzukagawa in a little while...
Junmai from Fukuwagura
Gentle sweetness. The aroma may be more subdued than that of junmai ginjo. The balance between the umami of the rice and the sweetness is excellent! The aftertaste is mild and refreshing, and the alcohol is moderate, making it easy to drink.
I couldn't find Junmai Nama at my local liquor store... I'll order it next time!
Banshu Aizan in Keiraku
Gentle slightly sweet fruity aroma. The balance of bitterness, umami, and acidity is excellent. The aftertaste is slightly bitter and refreshing!
Suzukagawa Junmai
Fruity aroma! Melon? The aftertaste is firmly acidic and moderately bitter.
Delicious sake with good balance.
Delicious, even though it has probably been in the supermarket for more than half a year!
Local brand of sake brewery famous for its sake
Suzukagawa Ginjo
Slightly sweet and refreshing aroma with a hint of pear. The sweetness is moderate and refreshing, including the aftertaste! Refreshing! Easy to drink with no peculiarities.
Suzukagawa was available at a nearby supermarket.
There were several kinds, so let's compare them!
Thank goodness they have 300ml...!
Purchased a bottle of FUZZY GREEN from the instrument Masamune at Tokyo Station, which was now one bottle per person!
Fruity refreshing aroma of muscat & melon. Slightly sweet, but with a hint of sourness and bitterness. The aftertaste is clear and easy to drink.
Now let's try to find a standard instrumental Masamune.
By the way, if you read Masamune phonetically,
It is said that the name "00 Masamune" came to be often used as a brand name because it resembles "seishu," which is a type of sake.
Kameizumi's CEL-24 yeast
They say it is not sweet except for CEL-24.
Sweet! The sweet dark aroma of pineapple spreads. It has a sweet aftertaste with a hint of sourness. The alcohol content is slightly low at 14%, making it easy to drink. I would recommend it to those who don't like sake and beginners.
I didn't know yeast could make such a difference..!
Kaze no Mori Standard 657
657 because of 65% polished rice and No.7 yeast
Unfiltered, unpasteurized, unpasteurized sake
Slightly sweet melon fruity aroma. There is a gaseous minerality and a bittersweet aftertaste.
Like eating melon from the delicious part to the bitter skin?
The bottom of the bottle also has a forest of wind... custom made bottle?
Zoka's sake-infused plum wine
You can taste the fresh aroma and sourness of plums. The umami of sake brewing is also strong! Simply delicious plum wine!
A sake brewery that makes sake also makes delicious fruit wine!
IMPRESSION series of directly pumped sake bottled directly from the freshly pressed bottle
The letters of the alphabet are the initials of the base sake
N / Nakadori (Masanochi), M / Keinochi
G / Gen-no-chi, H / Honochi
Good taste! Fresh, gorgeous and slightly sweet aroma spreads. Overall, it is clear and unctuous, with just the right amount of gas to make it easy to drink!
Bon at room temperature at the liquor store! The sake was left at a liquor store at room temperature... but the whole bottle was fired...
Isn't it too difficult to make sake that the flavor and aroma changes even at the timing of bottling?
Fukuwa Brewery, Mie Prefecture - Junmai Ginjyo Nama Sake
Sake brewery taken over by Imuraya, famous for its Adzuki bars.
Junmai-Daiginjo, Junmai-Ginjo, and Ginjo, usually raw and fire-aged, are supposed to be in the lineup. Shiki Brewing Sake made with a focus on terroir.
Fruity! Delicious! The sweet and sour muscat-like aroma spreads in the mouth. The umami is also well pronounced! The aftertaste is quite refreshing or dry. Personally, I like it a lot!
The muscat-like aroma is indeed similar to ohmine, but drier than ohmine?
I have 300ml of it, so I'll drink a lot of the others. I asked the liquor store about it, and they said it recently won an award and is slowly gaining popularity. I'll keep an eye on it!
I have a hunch as a sake newbie that they will release a seasonal brand in a couple of years and attract a lot of attention. ......
I bought a bottle of Futo's Junmai Ginjo Omachi Gojugo Usunigori Sparkling Nama at a liquor store in Nagoya. It took me about 10 minutes to open it, probably because I had left it in a small refrigerator on its side...
It was delicious! I can feel the mild sweetness of the light nigori. It's not only sweet, but I can definitely taste a kind of bitter astringent aftertaste. It is not sharp and easy to drink, but is it unique?
The one who pursues two hares will get two hares!
I personally like the name, which is very greedy and uncompromising!
Sentori's typical use of Asahi from Okayama Prefecture
Junmai Daiginjyo, unfiltered, unfiltered, bottle-enclosed, bottle-fired
Clear! Refreshing! I got a hint of melon, but it was more refreshing than fruity. The alcohol content is slightly low at 14%, making it easy to drink. Some people may find it a little lacking...
I wonder if it would be different on draft.
The red, white, and black color of Sentori, which was also on the lid, seems to be cranes, according to my research! I'm glad I took a picture with the red one on top. There are many kinds of Sentori, so let's try different kinds!
The symbol of Seonbori is a "crane" that lives in the fairyland
Red for love. White for tradition. Black for innovation.
Junmai Ginjo, unadjusted raw sake
Takachiyo: Classic robust type
Takachiyo: Modern fruity (specifications and ingredients not disclosed)
59taka: More suited for a mid-meal drink than Takachiyo, same yeast, same rice polishing method (59% flat polished rice), but with different rice
Shin Takachiyo: for low-alcohol daytime drinking
Note that it seems to be
Refreshing melon! I think it had a refreshing aftertaste as well as a fruity melon flavor.
*My memory is fuzzy because I drank it over a month ago.
It seems that there are some 59taka that use M310 yeast and Association 1801 yeast. Does this mean that this is the Kitashizuku one of the Hokkaido rice Kitashizuku and Comet using M310 yeast?
I think it would be more interesting if I could drink sake with an awareness of yeast, milling method, rice, etc! But for now, let's just drink a variety of sake!
Toyama Prefecture Haneya Summer Sake Nama Sake
It seems to arrive in mid to late May every year.
Refreshing! It is not too sweet and a little dry, but good! The alcohol is low at 14% and easy to drink. It has a moderate gasiness and a nice chili texture on the tongue!
*My memory is a bit fuzzy because I drank it more than a month ago.
Haneya is a sake with the wish to "exist as a sake that lifts the spirits of those who drink it, just as wings soar in the air.
Haneya is said to have many easy-drinking sakes. Many of their brands are sold seasonally, so look for them!
Kawatsuru Shuzo, Kagawa Prefecture Low-alcohol nigori sake
It was available at a nearby Aeon.
Sweet! It's delicious! Smooth and sweet, but the lactic acidity makes it refreshing. It's even more refreshing on the rocks, as recommended by the brewery! Gubi gubi gubi gubi attention!
No wonder this sake goes well with Kagawa's famous chicken on the bone. No wonder it is called "Calpis for adults.
Sanuki Kuraudei is well-known, but they also have a sake made with olive yeast. Let's look for Kawazuru's Japanese sake.
Sake from Kawatsuru.
It looks like calpis, but it tastes like calpis too. Does it really taste like calpis? Is my taste buds being pulled by prior information and sight?
Does it matter as long as it tastes good?
Fukii Cherry Blossom Bottle Junmai Sake
Apparently it is only available from January to May.
A beautiful and cute cherry blossom bottle found at a nearby AEON.
The taste is light, dry, and refreshing! Is it a so-called "classic" type sake? I wouldn't recommend it to a beginner like myself...
But the bottle is cute!
*I drank it more than a month ago, so my memory is a bit fuzzy.
At any rate, it is the number one ranking of beautiful bottles so far!
There was a sticker on the lid with product info, but I threw it away. Now that I think about it, maybe they use the sticker to make people see the clean bottle.
There is only one bird on the bottle. Now that I think about it, the bird might have been the front.
Kawatake Brewery, Mie Prefecture, which produces Hokosugi
The first prototype of a new brand under development.
Special Honjozo Unfiltered Nama Sake
TENWEI is the first, SHUKUREU is the second, and FESTIVAL is the third, apparently.
I think it was a modern type of sake with a pineapple-like sweetness. The aftertaste was delicious, with a bitterness or a firm umami flavor! I wonder if they are aiming for a kind of sake that goes well with meals?
Also, it is cheap!
I drank it more than a month ago, so my memory is a bit fuzzy.
If I have a chance, I'll drink the third one! I mean, I've never had Hokosugi either!
Totally unrelated, but I can't read the white letters on the clear bottle! Even with the naked eye it's hard to read, but I gave up on taking pictures!
