It is still a new brand. It is a nigori (nigori is the Japanese word for "cloudy") version of Kubota. I wonder if they are still in the process of trial and error. We are looking forward to the future of this brand. If you find it, let's drink it at this stage.

This is a brand often seen at izakaya (Japanese style pubs) in Chiba. I had it cold, but it was crisp and dry, and I think it would be better heated up!

A representative brand of Kozaemon. It is light and easy to drink. I thought it went rather well with seafood. We had it with fish from the Boso Peninsula.

While driving in Shiga Prefecture, I stopped by a sake brewery where the Noto style of sake brewing has been practiced for over 160 years. The sake is made entirely from Omi rice, and is only available during this season. The brewery also has a hall where a live jazz performance by "The World's Nabesada" was held.

I met them at a certain store in Ura-Namba and fell in love at first sight. I tried to buy it, but it was sold only by reservation!　I waited for the next season, made a reservation, and got it!　It's freshly pressed sake, so you have to decide the day you want to pick it up. I had to go on an overseas business trip right before I got it, so I was worried about what to do. Anyway, I got it safely!　It's nigori, but not too sweet, and the umami and bitterness are all around. Oh well, I have to wait until March again..,

I'm cheating on Kumamoto sake in Nagasaki. I'm cheating on this one. It has a sense of maturity and a sake-like aroma with a nice aftertaste. It has a strong impression and does not linger. This is not something you would expect to find.

While walking around, I found a warehouse and stopped by. I spent about an hour talking with the lady in the store. I was impressed by her passion for handmade sake and her passion for sake brewing!　The sake was soft and gentle, just like her mother's!

A dry, regular sake from Kunimare Shuzo, the northernmost sake brewery. It is crisp and has no sense of brewer's alcohol. Easy to drink. But the alcohol content is high, so don't be like an ogre!

It reads "Nirugame". It is said to be because the brewer likes Nirvana. The turtle on the label is wearing Kurt Cobain-type sunglasses or something...but how can they get this flavor without polishing the rice this much?　Moreover, it seems that the rice polishing ratio has been increased to 90% and 96% year by year, masochistically......drink the screams produced by the brewer who has been driven into a corner!

This brand was recommended by a sake store in Hokkaido. They said it is a brand between Junmai Daiginjo and Junmai Ginjo. I thought the flavors would clash, but was surprised to find a wider range of flavors. It is a sake I would buy if I could find it.

It is difficult to obtain outside of Aomori Prefecture. When I visit Aomori, I try my best to buy a bottle. The sake is named after the character for "rice field," so it has the flavor of rice, or rather the flavor of the rice paddies, condensed in it. Yet it is smooth and easy to drink.

If I could buy this sake in my neighborhood, I would make it a regular drink. It is a strong sake that goes well with all kinds of food. It also has a sharp taste, so it is good to savor and drink only the sake. The reasonable price is also a plus. You will want to buy more when you run out.
