I like Daishinshu. I thought I would like to drink sparkling someday. The opening of the bottle is unique. It is not too sweet and has a bitter taste. The aroma is more subdued than that of non-sparkling Daishinshu. I felt the aroma was moderate. So it goes well with food. If there is a sparkling sake that is not nigori sake, I would like to drink it. I would like to try it.

First, Ippaku Suisei! I had a hard time deciding and decided on pink Misato Nishiki. The aroma is subtle, yet a beautiful impression comes to mind. Nuances of Japanese pear and apple. Kagiya Limited Selection Unfiltered Nama-zake No.13, 14, 15 Junmai-shu, what a lot of different lots to compare! I wonder if I can tell the difference from tank to tank. I compared the two, thinking, "What's the difference? The No. 14 seemed darker, but only slightly. The waiter said that No.13 had a stronger flavor, so I guess I still need more practice.
