Although the lactic acid aroma, sweetness and acidity are common, the freshness, bitterness and thickness are different.
I think the freshness, bitterness, and thickness are different. And it is soft.
I wonder if this is the difference in the sake we are aiming for.
Maybe it is because the sake rice is Yamada-Nishiki.

Hidetsuhiko Matsumoto of Matsumoto Sake Brewery was dismissed from his position and went to train at a brewery
He went to his friend's brewery for training and brewed this sake.
He must have brewed this sake with many thoughts and feelings.
I am looking forward to the sake brewed by Nichinichi Brewery.
