WAKANAMI Sparkling This is a sake that is too good for me. Everything from the taste to the aroma to the aftertaste I love it so much. It really is the best of the sparkling types. When I think about why, it's the balance. The bitterness that is stimulated by the sense of foam that is not too strong The sourness that remains and the deliciousness that exists in it...like that. I can drink it refreshingly, but it soaks in slowly. It arouses the desire to drink forever. If you see it, buy it without thinking about it.

NO.6 Festival! I have a chance to drink the NO.6 I've been holding on to with friends and release it. NO.6 Richard Dyske type It was made to be easy to drink. As the reputation says, it has a strong sourness like a flax cat, but to be able to enjoy it as one of the characteristics not to feel bad. I think it's well-balanced. It's also great that it matches the bottle design so well. It's so light that even people who don't like sake can drink it. Because it is so light and has a lot of umami, it can be said that it is especially suitable for beginners. I guess you could say it's for beginners... It's not so easy to drink though. lol I want to spread the goodness of this sake.

NO.6 Festival! I have a chance to drink the NO.6 I've been holding on to with friends and release it. NO.6 Xmas-type Spark Strong carbonation! It dances and dances on your tongue! It was a strong first impression. I got a bottle of Flax Cat Spark very recently. It seems to be similar to the swooshing sensation of that time... It seems to be an independent feature of this one. The taste is very good, but it is very stimulating. I can't tell you the detailed taste... On the second day, it's a bit more of a settled swooshiness. It's easier to understand the sourness and the flavor in the back and whatnot. For me, it was my favorite. It's a great toast!

It has a hint of sweetness, and the acidity and mouthfeel unique to Shinsei. It's a really beautiful sake... Even if you try the other NO.6 Even if you try the other no.6, you can come back to this sake in the end. You can drink it forever.

I liked it when I drank it before. La Maison, a home brew by Jyoshito Kuheiji! Although I knew it was delicious I knew it was good, but I didn't have a chance to buy it for home use, but I finally did. First of all, the label gives a stylish feeling There is a sense of leaning close to you, isn't there? It is not strange to put it on the dining table. But I think it brings out the fashionable feeling. When I poured it into a glass and smelled the aroma It's not overpowering, but it has a strong sake flavor. When I took a sip, I was surprised to find that it didn't have a sake feel to it, but rather an umami taste and a citrus-like bitterness and aroma that blew me away. I felt that the umami was very strong, but it didn't linger on the palate. I felt that the sake was refreshing and easy to pair with food. I'm looking forward to the other sakes of Jyoshinjin Kuheiji I'm really looking forward to trying the other sakes of Jyoshinin Kuheiji that I haven't tried yet.

It's nice to meet you, Kamesen. I've been raving about how it's like a hollyhock by word of mouth. I finally bought CEL-24 which I had been curious about for a long time. It has a refreshing pineapple scent, and the taste is just as pineapple as the scent! The aftertaste is not too sweet, but I think it can be cured to some extent. I understand why people say it's like a flower bath. I felt that the sweetness was too strong for me when it was near room temperature. It seems to be good to have it chilled. I didn't know that this was a Kochi sake... I need to learn more about local sake, as I didn't realize that such a perfect sake is made in a prefecture close to me. LOL!

NO.6 Shisho-type I really wanted to store it longer and open it at a certain time, but because it was a secondary fermentation in the bottle, I had to bite back tears to open it because of the pressure. In fact, it was stored at an ice temperature, so it didn't blow out at all, and I couldn't hide my shock... lol The first thing to note is the aroma, but it doesn't have much of an aroma, probably because it's been chilled to the bone. There was a slight scent that was unique to Shinsei. The taste is not as sweet as I thought it would be... I wonder if the sweetness is hidden because the shuwa-shuwa feeling is very strong? It's like a yonotori, and when you taste it thoroughly, it's like something else entirely. The aroma in the mouth is also unique to Shinsei, so it's Shinsei! You can feel it very well. It's fruity, but it has a bit of a bitterness to it, so it's not like drinking it hard like the Yono-tori. In my opinion, it is better to leave it for a few days and let the sweetness come out a little. It's very tasty to begin with, though! I'll have to pull out the NO.6 and compare.

Aizan by W (Dove), which became my favorite at first shot. They also had Hidamori, but it was only available in one bottle and I had to give it up due to the availability of the sake cellar... I don't know much about it, but I like the sweetness and the richness of the rice that is typical of Aizan. It seems to be softer on the palate than Yamada Nishiki. Elegant. It goes well with a wine glass or a champagne glass. However, the alcohol content is 17 degrees, which is quite strong. The smell of alcohol seems to be less, but you can feel the alcohol coming in, so even if you are a strong sake drinker, it would be better to taste it slowly with a meal.

I've been wanting to drink it for a long time and couldn't find a store where I could buy it... I finally got it and was able to drink it. It's very low ale goodness. It has a strong sourness and I felt like I could really taste the sweetness because of that. The downside is that it's a 500ml bottle, so I'm a little sad it's gone so quickly. LOL!

Finally, we opened a bottle of No.6 at our house. I had it for the first time when I traveled to Akita, and I was shocked by it. Since then, I tried to find a shop where I can drink it, but they don't have it in the country. I was not able to get it or even drink one. The other day I was finally able to get my hands on a bottle, and I opened it without hesitation. I think it is characterized by the freshness unique to nama-shu and the clean, crisp aftertaste of the Shinsei magic. It is surprisingly light. The Rtype has a white wine taste while retaining its sake character, but I wonder how much clearer the Stype and Xtype will be. It's fun just to imagine. NO.6 should be drunk only by sake beginners... However, it has become so rare that even if I recommend it to beginners, they can't get it...it's sad.

This is the Ecru Nakadori. This is the first time for you to have the Nakadori series. The last one I had was the 2020 version, so I felt it was more alcoholic than I expected, but it's still easy to drink. I feel like the riceiness becomes more apparent as it approaches room temperature. Delicious.

It was one of the choices available in the grab bag. It is the 2nd lot of ORBIA CRONOS which was sold only 20 pieces. It is aged in cognac barrels. But I'm not very good at cognac, so I can't describe it... lol It looks like a thick noble wine, and the aroma is so thick that it reminds you of cheese for a moment. The moment you put it in your mouth, the condensed aroma, sweetness, and flavor explode, and your mouth gets congested. LOL! However, after that, the traffic jam was cleared smoothly and the aftertaste lasted for a long time. It is recommended to drink it chilled. You should taste it with a soft touch first and then gradually bring the temperature back to room temperature. When it's close to room temperature, the aromas and flavors show up in crazy intensity, so it's best to enjoy that!

This is Shinsei Cosmos. It is one of my favorite bottles of Shinsei. I was shocked when I drank it for the first time, and I drank it too easily. It tastes like Shinsei. It has a refreshing and clean sourness, and every time I drink it, I want to taste it more. I also paid attention to the unusual sake rice called "kaihen shinkou". The sake rice is also interesting. You can't taste it anywhere else... If you drink it at home, you have to control yourself or it will be gone in a day... lol

From Ehime Sake Festival This is my first time to try Kyohina's sake. I've heard a lot about the Fukiage Ken and the Ittojiryo. It's an unpasteurized sake, so it has a punch, but the sweetness tails off. It seems that even college students can drink it easily, so it's no wonder it's popular with students. The label is cute.

From Ehime Sake Festival This is the first time I drank Yamatan Masamune when I was a student. The sharpness was not that great, but the sweetness was nice and clean. It is polished to 40%, but the color is a little dark. The label is very cool.
