Kijo-zake is a method of brewing sake using existing sake instead of just water, where brewing water is normally used. The sake undergoes a fermentation process twice in the mash, making it thicker and sweeter. Apparently. All of this is what I received from my mom.

Mellow like white wine. It was sweet and not so sour. Easy to drink. It has a clear flavor with no cloying taste. Delicious.

I didn't know the brewery (sorry), but it said it was a medium-brewed sake, so I made my choice! I was very satisfied with the result! The illustration of a gecko was cute. I thought it was sweet, mellow, and well-balanced sake.
Sake from Nara. Sweet but not habitual. I like it enough to probably repeat it, but on this day it could have been a little less sweet and a little more refreshing.
My companion seemed to like it very much and recommended it to me. Thanks again! Tae-san also made tempura with wild vegetables (cod sprouts) from her relative's house in Iwate. It was so delicious that my cheeks almost fell off! The sashimi Hiramasa (sunfish) was also delicious and oiled😊.

Aged sake is sweet and mellow, but has a strong taste. If you like Shaoxing sake, red sake, or Maimito, you may like it. I'm not a fan, I guess. It's delicious, but I just wasn't looking for this sweetness and peculiarity right now!
It is strange that it is a half-moon label even though it is a sine moon. Is it because it is difficult to paste the label when it is slanted...? The moon label had a proper crater-like texture.
