It's hiyaoroshi season. Yuki no Bijin Misanishiki Hiyakioroshi has a slight tingling and gassy sensation in the mouth, and it feels so fresh that one might think, "Is this new sake?" I thought it was new sake. However, it is followed by a unique matured umami and bitterness that is very tasty! It looks like we can enjoy drinking it this fall as well.

It was a very hot day again today. Tonight we will enjoy a summer sake from Akabu, Natsukasumi. It is very mild on the palate, rather than crisp, and the refreshing aroma that escapes through the nose will put your mind at ease. It is also good chilled and on the rocks.

Yamato Shizuku Junmai-shu, directly bottled and fired.　It is a commemorative brew for the 100th anniversary of the birth of Rikuu No. 132. The mouthfeel is mellow, and the slight bitterness and refreshing sweetness are very well balanced, making it a very tasty sake. It did not have much acidity, so it was not fruity, but it had a solid sake feel and tasted best when left a little longer and closer to room temperature than at kin-kin.

Today we will have "Isshaku Suisei Sake Mirai" at the end of the consecutive holidays. The aroma was not so strong, but the moment it hit the palate, a refreshing sweetness and a bit of bitterness spread in the mouth. The aroma is like pineapple. It is very delicious ☺️.

Kuribayashi Shuzoten's Harukasumi is really delicious. Among them, this Misato Nishiki and No. 6 yeast has a different taste from the rest of the lineup. This combination is the same as Niimasa's Viridian, but needless to say, each has a different flavor. It is very soft on the palate, mellow and very tasty.

It is totally different from other liquors, with a citrus flavor and a refreshing sweetness that comes later. I don't know if this is the right analogy, but it is as easy to drink as if it were an adult sports drink. After all, Shinsei Cosmos is delicious! It is a very good product.

Sentori Organic Naturals 2022 ZERO:nigori. It is a nigori (nigori is a kind of "cloudy" sake), and before opening the bottle, it is sedimented and has a vent on the lid. The bottle has a vent on the lid, so I wondered if it would blow out. I open it with care, but it is not like that. The first glass is the supernatant. Unlike when the bottle was first opened, it has a quite gaseous feeling, as well as a clear sweetness and just the right amount of bitterness. It is delicious. Easy to drink. Shake the bottle to stir it and drink the second glass. The bitterness and gassiness seems to be a little stronger, but I don't dislike it at all. In fact, it tastes even better! It's thicker! This is a squeaky drink.

DOBUROKU series by Rice and Agave Sasanishiki Hop 01R3BY. It is a doburoku made with hops, and when poured into a glass, it is sloppy and very thick❗When drunk, it is more like "juwajuwa" than "shwashuwa". Not too sweet but fruity. It is also delicious when mixed half and half with "Ina to Hop" from the craft series ‼️.
