The bottle was opened on January 27. We drank the Effervescent. Thanks to the use of a Coravin sparkling wine saver, we had it without losing the fizzy sensation. The old wine-like sweetness, citrus, and stimulation from the fizz were delicious and wonderful. Although it was 2 months old, it tasted as good as when it was opened.

On the second day after opening the bottle, the fizzy feeling was completely gone. Sweet aroma with lactic acidity. Sweetness of lactic acidity, with a slight sourness. Perhaps because the fizziness was gone and the sweetness came forward, the unique dry taste was a little weaker than when the bottle was opened.
