I haven't had tasake at home since I lived in Aomori.
(Of course, it was hard to buy it in Aomori, too.)
Unlike the standard special junmai Hanabukiyuki, this one is made with Yamadanishiki.
It tastes fruity and very clear.
I was amazed at how much difference there is in the rice used for sake.
(I wonder if the yeast and production method are also different?)
It was very delicious and made me happy.

In 2025, I will have more opportunities to drink sake from Miyagi Prefecture.

Another brand of Asahi Shuzo, famous for Kubota.
Personally, I find it sweeter and more umami than Kubota.
This Jun Dai-spec brand also has a gorgeous ginjo aroma and umami flavor.
My great-grandfather who lived in Niigata was fond of this brand, and I feel its history.
First of all, the label is beautiful.
The taste is also very beautiful, and the sweet and sourness characteristic of Niimasa can be felt.
Now I have tasted all of Shinsei's standard sake.
It was a good year.
It's a very popular brand.
It's so good, Akabu looks like it will go all the way to the top.
This one has a good balance of sweetness and sourness that will leave you wanting the next sip.
I can't take my eyes off next year.
I am looking forward to it now.

When I drank it, it was drier than I expected.
It has a gassy and acidic taste that is typical of Kaze no Mori.
It is a unique sake that is not too cohesive in a good sense.
