Drink it chilled. I imagined it to be a refreshing type from the name "Gin Fubuki". It is refreshing, but has a nice bitterness and sweetness in the gasiness, as well as the firm umami of junmai (pure rice). I paired it with flatfish sashimi, but it might go well with dishes with more pronounced flavors. I will marinate half of it and drink it again.
Immediately after opening the bottle, the wine is fruity, deliciously sweet and easy to drink. The sweetness came forward a little after 3 weeks from opening the bottle. It was a well-balanced sake.
