26th brewery tour of temples, shrines and sake breweries on foot We arrived safely in Ueda a little after 6:00 this morning 😀. We started our trip by first paying a visit to the Kitamukai Kannon-sama 😀. The first brewery we visited was Wakabayashi Brewery, located between Kitamukai-sama and Ueda 😀. My preliminary research said they open at 9am, but we arrived at 8:30am 🤣. We waited in the cold until 9:00 to enter the store, and when we entered the store, they were looking at us from inside to see what we were doing when the store was already open 😅. But they offered us a free paid tasting because we waited in the cold 😇. After all, it's a very rare occurrence as Pon-chan told us 🤣. The tasting was of Tokujun and Dry Junmai brewed with Hitogokochi, and I was surprised to see the completely different expression of the same rice. ‼️ We decided to take home the Tokujun because we like sweet and tasty sake, but the Dry Junmai was also a delicious sake with a delicious umami taste and a crisp, dry finish 😇. When we paid the bill at the end of our trip, we were presented with sake kasu (sake lees) for making us wait 😀 It was a great start to our trip!

Hi, ma-ki-chan 😀 All of the breweries in Ueda were very personable people 😀. The brewer of Wadaryu told me that the breweries in Ueda are all very close and they all make an effort not to lose out😇.

Hi Jay & Nobby 😀 Before we went on the brewery tour, we really wanted to visit the Kitamukai Kannon (Goddess of Mercy), so we started to act as soon as the bus arrived 🤣. Thanks to that, we arrived at Wakabayashi Brewery early and they were so happy to see us that they even gave us sakekasu as a gift😇.

I was curious to buy spring sake since it's been talked about around me lately. It's not fruity, but juicy and voluptuous. But the bitterness of the reaction is so small that it can be enjoyed on its own. I think it is similar in category to Hana Yuu, which I finished the other day.

There was a sizzling sound when the bottle was opened. The initial aroma is like brown sugar. When you drink it, it has a slightly sweet and slightly bitter aroma. The overt aroma is that of junmai (pure rice). It can be drunk by itself or during a meal, but it seems to be better during a meal. Drank on its own, it has a robust image and is very drinkable. It also tasted like smoke. Next, I tried heating it to lukewarm because of the POP on the store shelves. The aroma and mouthfeel changed to a softer one, and the sweetness and sourness came out and the image became a little lighter, making it easier to drink. Delicious. Lukewarm is recommended. Something by Kuroemon XVI or similar to Taisetsukei Special Junmai? my favorite Hitogokochi Polishing ratio 59 Alcohol 15

Junmai Ginjo made with local Yamae Nishiki from Takeishi, which is currently suffering from forest fires. The aroma is fruity. The taste is sweet and delicious. It is not only fruity, but also has a strong rice flavor. The middle part of the taste has a sourness, a slight bitterness, or spiciness? Pungency? There is also a sense of sake. A well-balanced fruity sake. The yeast used is Ogawa No. 10 developed by Meiri Sake Brewery, which I respect very much. For those who like fruity sake, I recommend "Tsukiyoshino" by Wakabayashi Brewery in Shioda, Ueda City, Nagano Prefecture!

This is the first sake from Shinshu in my life 🍸. The taste of "Tsukiyoshino" has a gentle sweetness and quite a bit of acidity that fills the mouth, and the alcohol and spiciness give the impression of a clean and crisp taste 🍸✨. It is brewed by a female toji who trained at Okazaki Sake Brewery, famous for Shinshu Kamerei, and according to Hidebo at the sake store, it is "getting better and better every year" ✨.

Opened February 8, 2025 Purchased after tasting at the brewery Light and refreshing, with a slight bitterness, alcohol stimulation, and fermentation acidity ^ ^. Well balanced. It goes well with sashimi, sautéed fish, boiled vegetables, vinegared dishes, and everything else. The slightly citrusy aroma is also very nice ^ ^. A great sake 🍶!

Junmai-shu ⭐️⭐️⭐️⭐️ Polishing ratio 70%, ALC 15%. Second time in the set to compare 😅😅 I was told it was slightly sweet, but the taste of Kisekirei was still on my tongue and in my brain, so the first sip of this one felt a little dry 😅. After resetting my palate with the Waragi and Tsumami, I found it refreshing, moderately sour and slightly sweet 😋. Maybe it can't be helped, but after drinking a super sweet sake, a slightly sweet sake feels slightly dry 😅. 20250124: Nagano station building standing bar

Female Toji✨ I thought it would be gentle and sweet taste, I thought it would be sweet and gentle, but it is just as it should be. I think it tastes good lukewarm too. I haven't tried it though 🤣.

Oh, I'm already a fan of Tsukiyoshino. Following Hana, Sora is another masterpiece. Fruit juicy clean body. I love the sharpness of this one. I'll be there on the third Saturday next month 🏃.

Tsukiyoshino's Sora - Unoakiromi Nama Sake This is my first time to buy Tsukiyoshino's sake, but recently I've been seeing it a lot at Sakegawa. I often see it at Sake-no-Wa, so I got it! I'll visit a sake brewery in Ueda sometime! Fruity aroma When you put it in your mouth, you will be surprised by its sweetness and flavor. Good balance of sweet and savory It's pretty good, let's drink it again! The third one is homemade Yuzu Daikon! I make it whenever I can get my hands on some yuzu. I make it by eye so it can be sweet or sour 😅 but it's delicious 😋. It can be sweet or sour😅but it's delicious😋.

Miyamanishiki 55% produced in Nagano Prefecture The aroma is fresh and fruity with just a hint of syrup sweetness, white peaches and apples. The transparency is pleasant. In the mouth, the beautiful, sweet and sour syrupiness and sweetness of various fruits spread as the aroma is.
