A clear and refreshing drink. It is not an addition but a subtraction. Clean with no cloying taste. It will have a nice flavor when heated. How about it for a long autumn night?
Tsukiyoshino's Shinshu Secret Sake Hanpukai 2025 Gold Course.
Tsukiyoshino is brewed by a young female toji, Mami Wakabayashi. This time, the challenge is a Junmai Daiginjo made entirely from Yamae-Nishiki produced in Nagano Prefecture and polished to 49%.
It has a gorgeous nose reminiscent of peaches and muscats.
It has a smooth texture with no cloying taste, a refreshing spread of sweetness, a mild umami and a beautiful acidity with a smooth, mildly bitter aftertaste.
Compared to last year's hanpukai, this wine is much tastier! A week after the bottle is uncorked, the flavor is more lively, and the umami and crisp acidity are even more pronounced!
Tsukiyoshino no Midori Unfiltered Nama Sake
We came to Yakitori Bancho, Ueda Ekinaka Branch.
We had to wait for 30 minutes because the restaurant was full.
A set of 6 local sake breweries in Ueda to compare ^ ^.
It's so exciting, isn't it?
We also visited the brewery store, but it was closed that day 😭.
Yakitori goes well with Ueda's sake 🍶😋.
Can be used as an aperitif.
It is easy to drink and refreshing on the palate.
However, as you continue drinking, the sweetness spreads in your mouth.
It is not too thick, not too sweet, not too spicy, and is very good when drunk with sake.

Sanke Nishiki Junmai Daiginjo
The aroma is like green apple with a hint of sourness.
The first sip is full of sweetness and umami. Bitter aftertaste.
Then, it leaves with a refreshing taste. Delicious!
The label evokes the image of "Fifteen Nights".

Rating 4.4-4.5, 4.5
The aroma is mellow and wasanbon-like. Mellow. Slightly thicker body. Yamae Nishiki? The acidity is also effective, but the aftertaste is also mellow. After a while, the aftertaste becomes dry. Goes well with autumn dishes. Warmed sake is very tasty with a good balance of mattari, sweet and sour. Easy to match with autumn dishes.
Tsukiyoshino's Shinshu Secret Sake Hanpukai 2025 Platinum Course
Rating 4.4-4.5
Slightly mellow aroma with a laid-back feel. Sweetness and umami. The taste is clear and free of any unpleasant taste. The acidity is moderate but mild, with a soft citrus flavor. Yamada Nishiki?
It was a bottle that I appreciated in the current lingering summer heat, which has the good points of a light daiginjo rather than an autumn sake.
Thank you very much for your kindness.

My son-in-law poured it for me... I hope it will win a gold medal next season for the third consecutive year! This dry junmai tastes the best for everyday drinking.
