The one that's been the talk of the town at the foreign connoisseur shows. It was smooth on the palate, but after some time, the bitterness became a little stronger. That seems to be Miyamanishiki, though.
Tsukiyoshino's Nama Sake.
The Shinshu Secret Sake Hanpukai is having a female toji showdown for the month of June.
This Tsukiyoshino is brewed by a young female toji, Mami Wakabayashi, with the aim of creating "a food sake that can connect people and heal them.
It has a topping aroma of apples and muscats, and a very smooth mouthfeel despite being a draft sake. The elegant sweetness, mild umami, and acidity are well balanced!
It feels heavier than the 15° and has a stronger alu feel.
It is fresh, rather sweet and fruity, with a tart aroma and a slightly bitter, deep flavor.
Nagano's sake is delicious!

Sour, slightly astringent, a little bit of a lingering astringent feeling.

I was expecting a sweeter version of Tsukiyoshino, but I think this one is the right choice!
Tsukiyoshino Moei Yamahai Junmai Unfiltered Nama-shu
(Ueda City, Nagano Prefecture/Wakabayashi Brewery)
This sake is made in Shiotadaira, a town in Ueda City, Nagano Prefecture, which has a sister city alliance with Kamakura City and is known as the Kamakura of Shinshu. It is a junmai-shu characterized by its acidity, and has a pleasant yogurt-like aroma with sourness and mild sweetness.
Sake from Shinshu at an acquaintance's house in Sendai, for some reason. Hitogokochi, my favorite sake rice. The sweetness and the refreshing taste. I love Wakabayashi Touji.

Moderate acidity and sweetness. Slightly messy, but the umami spreads well.
It has a slightly different impression from the sweet fruity Tsukiyoshino, which is also delicious.

Slightly muffled transparency. Fruity aroma reminiscent of ripe banana and pineapple. There is also a slight savory note reminiscent of grains. The aroma is strong. Sweet and sour and juicy on the palate. Pleasant acidity with a slight effervescence. The mouthfeel is juicy and rich. Medium lingering aftertaste with a moderate astringency. It is a fragrant and mellow sake.
