Another unfiltered raw sake from Nagano Prefecture 😀.
This is also the first sake that I bought at Wakabayashi Brewery on my way back to Ueda City from the Kitamukai Kannon Temple, which I visited first thing in the morning when I went on a tour of Ueda breweries in March.
The aroma is as gorgeous as the name "Sakura" and the taste opens up in your mouth.
I failed in the timing of drinking this 🤣.
I should have brought it to a spring hanami 🌸😅.
It's really rare to find a sake that is so gorgeous and fruity, yet not clingy at all 🌸.
Unfortunately, it's hard to find around me, but it was a delicious sake that made me think I could visit Ueda again just to get it 😇.

This time we received a green label made from Yamae Nishiki grown in the local Takeishi area.
The aroma was subdued yet fruity, with a refreshing freshness that seemed to rise quickly.
In the mouth, the clean acidity is impressive and the clear umami spreads quietly.
The flavor is light, yet has a core. It was like a fresh green breeze.
The "Yamae-Nishiki" rice used is a sake rice born in Nagano, and is characterized by its ability to produce a crisp sake with little cloying taste.
This sake brought out its charms in a straightforward manner, showing the sincerity of the ingredients and the brewer.
It is brewed by Wakabayashi Jozo, which was founded in 1896.
Although sake brewing was suspended for a while, Mami Wakabayashi took over the brewery and restarted it in earnest in 2015.
Tsukiyoshino" is carefully brewed with local rice and water, and is filled with the passion of the land and its people.
It was an elegant and pure brew that quietly snuggles up to you.

Even though it is the end of April, there was a cold wind today. The weather was fine.
The rice paddies in our neighborhood are beginning to fill with water, and it looks like rice planting is just around the corner. There is a shortage of rice, but there are no rice paddies that have been restored to cultivation. I wonder if the breweries have enough rice for sake. I wonder if the price will go up again next year.

Tsukiyoshino Hana by Wakabayashi Sake Brewery.
This sake was named after a cherry blossom viewing party at Yoshino Cherry Blossom viewing party, where a cherry blossom snowstorm was seen dancing.
We had it stocked in the bank's refrigerator for a long time (laugh).

Although this sake is made with Hitogochi from Nagano Prefecture and is said to be gorgeous, I could only identify the sweetness that hit my tongue softly when I drank it almost tongue-tied. 😓
