I am such a big fan of Tsukiyoshino that I love the bag. This time we received a green label made from Yamae Nishiki grown in the local Takeishi area. The aroma was subdued yet fruity, with a refreshing freshness that seemed to rise quickly. In the mouth, the clean acidity is impressive and the clear umami spreads quietly. The flavor is light, yet has a core. It was like a fresh green breeze. The "Yamae-Nishiki" rice used is a sake rice born in Nagano, and is characterized by its ability to produce a crisp sake with little cloying taste. This sake brought out its charms in a straightforward manner, showing the sincerity of the ingredients and the brewer. It is brewed by Wakabayashi Jozo, which was founded in 1896. Although sake brewing was suspended for a while, Mami Wakabayashi took over the brewery and restarted it in earnest in 2015. Tsukiyoshino" is carefully brewed with local rice and water, and is filled with the passion of the land and its people. It was an elegant and pure brew that quietly snuggles up to you.
