I wanted to drink a sake with a different taste from the recent past...so I selected a sake from a distant place of origin at my first visit to a restaurant - Yamaguchi Prefecture!
The taste is clear and light, with a good balance of sweet and sour, and easy to drink with no alcohol taste. ☺️🙂
As for the dish to go with it, I can't say Yamaguchi Prefecture is famous for puffer fish... so I decided to go with sea bream sashimi.
It matched surprisingly well with grilled chicken with salted malted rice, which I prepared separately.
It may be a versatile food wine that can be served with any dishes 😁.

A bottle that I bought at the brewery on a business trip.
When I opened the cork, I heard the sound of air leaking out.
And then a "siphon" sound, which is always a nice sound!
The aroma is hard to describe, but it smells fresh and slightly vanilla-like.
The mouthfeel is a bit chili, then a bit gassy, and then a bit refreshing, but it doesn't linger.
