The brewer of Amami came from Yamaguchi. I was very impressed with the quality of the food and the service.
The sake was very fruity and had a fruity, apple-like taste.
Fruity and apple-like fruitiness, with a perfect balance of acidity and umami. It's been a while since I've had this, but the Kurotemi raw sake is really good.
◉Tenbi Junmai Ginjyo Nama-Nagara Sake
This is not nigori, but rather a standard Hakuten. The mouthfeel is clear, with a strong citrus acidity.
I was glad to see that the kuro-ten drowned out the impression I had of it in the past.
