This is the first Yukiten in two years. This sake was not released last year due to Mr. Fujioka's departure from the company.
The taste is stable and delicious. The taste is a bit mellower than when Mr. Fujioka was at the helm, but it has a nice silky accent and a fresh sweetness that makes you feel as if you are drinking a carbonated beverage called "Skoal.
The nigori sake has a bit of a "squashy" taste, but it is moderate and not overly vigorous.
It was a satisfying sake for the beginning of the 2024 brewing year.
I am looking forward to another year.

My second new sake of the year is Amami 🍶.
The gas is just a little bit of a whiff 🤔.
First the top clear 🍶.
Sweet and tasty 😋.
Next, including the orizumi 🍶.
Mellow sweeter flavor 😋.

Yesterday we had a pork bone base lettuce nabe, and the sweetness of the pork bone base soup and the sweetness of the amami go absurdly well together 😋.
Tenbi Shinshu Junmai Ginjo
Nigori Nama (Snow Heaven) 720ml.
The sake was very well made,
I heard that Tenbi is back.
After 2 years? I bought the nigori that was released after 2 years.
The gasiness was not as bad as I expected,
and the nigori-gori was thin 💦.
I was impressed by the last Yukiten and
Maybe it's because the spicy tempura was so good.
I was less impressed ☻
Continuing with the Yamaguchi connection, we will now have our two-year old winter Tenbi 🍶.
The aroma is juicy, like muscat. On the palate, it has a sweet-sour and astringent taste. It also reminds me of white wine. I would like to pair it with raw oysters 🤤 delicious✨.
There is not much standing aroma.
Slightly gassy on the palate.
Slightly rummy and muscat-like with a squashy flavor,
The texture is fresh.
The nose is fresh and clean.
The wine pulls off elegantly and smoothly, and is modern.
I've recently become addicted to yunibi.
The label of Tenbi has not changed, so it is hard to distinguish the version.
