The brewer of Amami came from Yamaguchi. I was very impressed with the quality of the food and the service.
The sake was very fruity and had a fruity, apple-like taste.
Fruity and apple-like fruitiness, with a perfect balance of acidity and umami. It's been a while since I've had this, but the Kurotemi raw sake is really good.
◉Tenbi Junmai Ginjyo Nama-Nagara Sake
This is not nigori, but rather a standard Hakuten. The mouthfeel is clear, with a strong citrus acidity.
I was glad to see that the kuro-ten drowned out the impression I had of it in the past.

It has been a long time since I have had Yamaguchi sake. I haven't tasted nigori since Mikumari.
The aroma is faint apple. First, the supernatant. It is not as sweet and refreshing as one would expect from a chili. When mixed with ori, it feels a little like yogurt. As the day goes by, the chili flavor decreases and the mellowness increases. I would like to try other brands.

There is no time to be stressed out during the new sake season I opened a bottle of Amami that I managed to get on my day off 🍶I'm excited because last year it sold out immediately and I haven't been able to drink it. ✨️
I was a little wary when I opened the bottle because it spewed out 💨 vigorously, but there was no automatic stirring and I was relieved. ☺️ I only took the top clear layer and the aroma was fresh fruit and a little lactic acid drink, maybe green apple 🍏 In the mouth, fresh sweetness, a little gas, sourness and almost no bitterness came and it went down smoothly and pleasantly 😋 Even after mixing the lees, the impression of the flavor did not change much. Even if you mix the lees, the impression of the taste doesn't change much and it's a refreshing nigori sake that kills you instantly 😅I can see why this is so popular 🥰I'm a candidate to repeat it next season✨.
