Clean taste....summer wine of Amami...it is like rumune....
Personally, I love Tokusenmai itself, but I prefer Jungin to Tenbi's standard Tokusenmai... but I like the dry dry version of Dry Ten just as much as Jungin. I was wondering if this new Amami was more like the standard Tokujun or the dry version, but I had no choice but to try it anyway, so I bought it.
The aroma is very mild on the nose, but when you taste it, it smells like grapes...or wine, as is typical of Tenbi.
The mouthfeel is slightly sour. It's not a bit squishy, but it's a different feeling from wine, which makes this sake something more than just a wine-like liquor.
The sweetness is quite moderate and dry, so of course it goes well with light Western or light Chinese food.
It can also be drunk on its own. The good taste, modern aroma, and lightness of alcohol make it easy to drink too much.
It is also important to note that although it becomes a bit pungent after a few days, it can be drunk for about 10 days.
I like Tenbi after all. I especially like the dry sake. It was a great product that made me want to drink it again!

The aroma is gorgeous, with a fruity, sweet and sour muscat-like aroma.
The inclusion of the slightly pitchy gassy brewing water is neither too heavy nor too light, and while the sweetness of the muscat is outstanding, the acidity is well orchestrated to wrap it in an obtuse wrapper so that it does not interfere with the meal. And then it dissipates. This is a delicious sweet and fruity sake. I love the wide range of sake brewed in Yamaguchi. I want to try more Yamaguchi nowadays. Thank you again for the sake tonight!

Finally, we opened the last bottle of Amami brewed by Toji Fujioka.
The current Amami is certainly good enough, but this one is just as good without question 😭.

I have been away from Amami for a long time, but I bought a bottle of this summer sake-like product.
It has a good balance of sharpness and sweetness, which is typical of hi-ire sake.
It is a stable sake even after a week and I rather like it.
It was my first time, Amami 🫶.
When I opened the bottle, I was surprised to hear the cork pop! I was so surprised when the cork flew open and I yelled out "wow" and was surprised twice by my own voice.
My impression after drinking it was that it was sweet and delicious!
It had a nice piquancy and a muscat-like aroma. It also has a delicious aftertaste.
It went well with mozzarella cheese!
On the second day, the taste was more subdued than on the opening day; I liked it better on the second day!
It definitely goes well with scallop carpaccio, that's for sure! I went to the supermarket to buy some scallops, but they didn't have any scallop sashimi... but they had sushi, so I bought some.
Unfortunately, it didn't go with the scallop sushi😭I'll have to revisit this one!
