Yamada Nishiki, gorgeous aroma and sweetness, but not as sweet as the aroma?
Compared to the Yamasan I've had so far, it's a bit more refreshingly sour, but maybe that's because I'm still tasting the myoga in the cold tofu.
Yamazan is becoming quite popular.

First up was Nanamizu SPRING.

First wine store, then a standing bar (chair seating) because I wanted to drink sake after eating kibinago fritters (tempura).
At first the bar was full, which was unusual for a standing bar, but soon a seat became available and we sat down on chairs.
The fritters were tangy with a hint of sweetness.

Slightly matured, but rather refreshing and bitter

Rather clear and acidic.
Slightly sweet, but not sharp, with a slight sweetness that comes on later.

Nabeshima with a mildly sweet atmosphere for the first time in a long time.
Maybe it's because of the slight foaminess, but it seems a little bitter.

It seems to be an alternative to Shinshu Kamerei? I think it has a slightly sour taste.
I thought the alternative to Shinshu Kamerei was Kawanakajima Genmai, but I guess there are a lot of alternatives out there.

Is this the first nigori I've had before dawn?
It has a nice acidity followed by a sweetness that is typical of nigori. The aftertaste disappears rather quickly, but it's delicious. This is different from the usual pre-dawn nigori, but it's delicious. ぎゃばん☆☆☆☆☆

Freshly squeezed raw sake from Shiboritetsu. It is fresh. It's delicious.

Light acidity.
I thought it would be refreshing because it's a Saku sake, but it's a Banno. Light modern sake. It's just plain tasty.
