Yamada Nishiki, gorgeous aroma and sweetness, but not as sweet as the aroma?
Compared to the Yamasan I've had so far, it's a bit more refreshingly sour, but maybe that's because I'm still tasting the myoga in the cold tofu.
Yamazan is becoming quite popular.
It is delicious!
