This is the 8th kind of sake we purchased on our trip to Yamagata 🤗.
I finally found Yamakawa Mitsuo brewed by Otokoyama Shuzo and was able to have 4 different breweries of Yamakawa Mitsuo, it took me 6 years since I first met him in 2018 😅.
Yamagata's [Pechorazuke], which Mitsuo Yamakawa says makes sake go down... I must have missed it at the souvenir store, I didn't notice it at all😅I'll look for it next time I'm in Yamagata😋.
I think the winter sake is slightly amber tinted, mild, full-bodied and slightly sweet.

Mitsuo met a kappa in a cucumber field. They hit it off and decided to drink sake with freshly picked cucumbers.

At 13 degrees ALC, I think autumn sake is a little richer than summer sake, with a mellow sweetness and slight bitterness.
A bottle was sent to my home via home delivery, then divided into two four-packs and two two-packs and chilled in the fridge.
Every time I open the cork, I hear a [popping] sound. Hasn't fermentation stopped?

This is the fifth kind of sake we purchased on our trip to Yamagata 🤗.
This is the 2023 version of [Yamakawa Mitsuo], which I had not encountered at all last year. I was surprised to find it in a bottle at a liquor store I was told about in Toko, so I bought it and sent it home by courier 🥰.
The sake shop is called [Kojima Unosuke Shoten]. Toko's brewery name is Kojima Sohonten... I guess they are relatives 😅.
I think this summer sake with 13 degrees ALC has a light mouthfeel with a hint of sourness and some bitterness.

The name "Mitsuo Yamakawa" is derived from one character from each of these breweries.
It combines sweet and sour, umami, and a hint of bitterness.

What a sake to order when you see the label.
It is easy to drink with a sweet and sour taste at a low alcohol content of 13 degrees. I wonder if it is because they increased the amount of koji.
Mitsuo Yamakawa has been curious about this wine for a long time and has not been able to drink it.
It is a little bitter, dry, and acidic. It is a bit bitter and dry, with a hint of sourness, and it goes down your throat smoothly at the end. I will take a bottle of Mr. Yamakawa's Shogo-Bottle to Taiwan on my business trip starting tomorrow. ✈️
