I purchased this bottle at Sasaya-san, where I stopped by during my trip to Tendo City, Yamagata Prefecture, in September.
The bottle we brought with us was the regular distribution version of Junmai Daiginjo bottle-warmed and fire-aged sake.
It is an anniversary limited edition autumn sake from Mitsuo Yamakawa.
Kojima Sohonten of Toko is in charge of brewing.
The rice used is 100% Dewa Sanzu produced in Yamagata Prefecture.
Polishing ratio is 50%.
Alcohol content is 14%.
Association yeast No. 10 was used to commemorate the 10th anniversary 🤗.
The aroma when the bottle is opened has a mild and elegant fruity aroma. The light aroma of bananas and white peaches and the soft aroma of freshly cooked rice rise up in a flurry without being too gorgeous.
When poured into a sake cup, it has a clear, light golden color with a smooth and silky nature.
When you take a sip, the mouthfeel is soft and reserved. Gentle rice flavor and mild acidity make up the fullness of the flavor. There is a natural fruitiness that is not spectacular. The aftertaste is crisp with little bitterness or astringency. A hint of rice sweetness is perceived as a lingering aftertaste that is not too long. It is not too flashy, but has a calm and gentle taste. After all, Yamakawa Mitsuo is not to be missed. We also enjoyed the autumn sake.

It has a gentle heady aroma with pineapple-like nuances, a deep yet fruity sweetness, a firm umami, and a pleasant acidity that adorns a nice lingering finish.
