I made a quick change from the sake I was planning to make and went with Tsuru-sama's Nama-zake!
We had a variety of ingredients in the fridge today, so I made this dish to enjoy a variety of flavors 🥰.
The salad was our hydroponic lettuce, pork fillet cutlet, herb grilled kanpachi, boiled spinach with black vinegar, marinated carrots, and after this, brown rice fried rice. ❤️
I tried to combine saltiness, acidity, herb flavor, meat flavor, sweet vinegar, etc. little by little so as not to miss out on anything.
Well, when you have the experience of failure, it's hard to be aggressive, and it's like trying a few things at once, but they were all quite tasty and went well with the sake.
The dark green Mikotsuru-sama had a complex flavor this time. It had a good balance of sweetness, spiciness, and astringency, from perfectly chilled to a little closer to room temperature. ‼️ It has a slightly cider-like sweet aroma. But never sweet🤞.

Gokotsuru Origara-mi, which was given to me.
As it is freshly pressed, it is quite fresh and you can enjoy the petit gas feeling.
The bitterness is rather robust and can be enjoyed on its own.
Not that it matters, but it seems that Japanese coffee has more bitterness and less acidity than coffee from other countries.
Someone has been considering the reason, and the simple fact is that Japanese people can enjoy bitterness.
I wonder if there is a part of that in sake as well.

I bought this bottle when I visited Hata Sake Shop.
I went to Suwako in the summer but didn't buy it💦.
The label gives me a feeling of good luck🍀.
It is a junmai dry orikara-mi, but you don't feel the spiciness but rather a mild sweetness thanks to the orikara-mi, and you can taste a good acidity and gassiness, which gives it a fresh explosion 💥.
It's easy to drink with a gentle sweetness, similar to Senkou's ✨.
The next day, the freshness is about half gone and the dryness shows up, but it's also delicious!

On a side note, when I opened the figurine at the beginning of the year, it was too big and there was no place to put it, so it was on top of the fridge...

Mikotsuru Junmai Ginjo Yamadanishiki Unfiltered Unrefined Nama Sake
I compared all Mikotsuru's sake at the "Traveling SAKE" tasting, and I knew that my favorite was Miyamanishiki, but then I realized that I had not had Yamadanishiki, so I bought it.
As expected of King...the price was high.
I drank it cold.
There was a sizzling sound when the bottle was opened. The bottle did not pop.
Numerous bubbles adhered to the glass when poured, and the color was clear and almost colorless.
The top aroma was of ripe, sweet fruit.
The mouthfeel is fruity with a gaseous, juicy sweet and sour taste.
The palate is full of the rich sweetness and flavor of ripe fruit.
The aroma that passes through the nose is full-bodied, with a strong sweetness.
The label on the back of the bottle says that it has been aged for about 8 months, which explains why it is so rich.
I thought Miyamanishiki was the best, but King is also delicious, and it is hard to say which is better.
