Hikomago Junmai Daiginjo 2005 Brewing
It was probably kept at a temperature below refrigeration, so the strong coloring and Maillard-like aroma are not strong.
The color is crystal to yellow, and the aroma is of tropical fruits. Pineapple, melon, banana, or something along those lines.
The palate is very smooth and slightly mineral, but smooth and pleasant to drink. The taste is mainly sweet and the acidity is not that strong.
I have had some old Daiginjo-style sake from Ryuriki, but this is close to it. The flavor is a bit dry. I don't think it is weak because it is a hikoginjo, so if a daiginjo is aged at a low temperature, it will probably change in this way.
Sake aging. If possible, I would like to systematize the changes caused by aging by assigning parameters such as storage period, sake quality, and storage temperature. But the storage temperature is too difficult for my hobby...

When opened, there is not much aroma.
The color is clear with bits of rice floating in the air. It is not nigori.
When drunk, it has a light and refreshing mouthfeel.
There is no sweetness, but instead a heavy umami flavor. It stands out because there is no extra flavor. It is right in the middle of junmai sake 🍶🌾🎯.
Occasionally, a sour aftertaste comes with a piquancy ⚡️. The sensation is so numbing that it could be mistaken for spiciness. If I wasn't used to drinking sake, I might have thought it was spicy.
Perhaps it is a classic type of sake, but it was easy to drink without feeling alcoholic 😄.
The sake 🍶 by itself is well worth a look 😤.
2 points No, it doesn't fit. Too much lime (which I keep saying). I tried heating it up (maybe because it was warmed up), but it didn't get rid of the miscellaneous taste. What's the problem?
It hasn't been cold this year, so there haven't been many opportunities for hot sake: ♨️
I took the opportunity to get the Hikoson out and heat it up 🍶.
The sake spread on the palate and was very tasty 🤤.
I couldn't stop and soon ran out of sake 😂.

It could be taken as a little bit of a tangy taste, but it's nostalgic and tasty.
It makes me want to eat seared dry food.

It has a sense of maturity, but it also has a fruity flavor.
It also has a hint of Shinkame in the back of the bottle, which I think is wonderful.

It's a pure rice ginjo 😅 mirin. The aroma is like an old sake like Daruma Masamune. When you drink it, it is matured but also refreshing. Sourness and spiciness. Hot sake (60 degrees). Mellow aroma. Gentle flavor. My wife says it has a spicy taste 😆 Very good match with bonito tataki👍. I think the sake might be too much for Hiramasa 🤔.
I finally bought a heating device "Kanmakase" supervised by Shinkame 😆 Very convenient. It's great to adjust the temperature and let it warm up slowly. ❗️
