I tasted it during the New Year holidays. I thought it was arabashiri, but the staff mistakenly put shiboritate in it 🤣. It was fresh and easy to drink even though it had been fired once.

Today, following yesterday's Aizan drinking event, I went to the Osaka Bay Tower's Japanese sake festival event 😀. I was informed in advance by bouken-san that there was a sake that Saku-san usually does not have, so I made a toast with his wife with that sake 😇. The sake was even clearer and fruity than Saku's usual sake, and we were very satisfied from the start 😀. During the live taiko performance by three women, my wife and I, who are both learning taiko, were overwhelmed by their amazing performance 😇. We were able to compare over 130 different types of sake, but my favorite was from Yamazaru, a brewery located in Asa, Yamaguchi Prefecture 😇. From the aroma to the mouthfeel, it was right up my alley👍! I had a chance to talk to the brewer and asked him about the stores in the Kansai area that carry it.

Junmai Ginjo🍶Aged Sake✨Snow❄️☃️ Aged sake, light yellow in color. Cold sake, matured, Daruma Masamune-like. Not heavy, warmed to 60 degrees. Soft around the edges. Mellow. ☺️ It's still a sake for warming up. I served it with scallop sashimi sent from my relatives in Hokkaido 😋The scallops were huge and delicious💕. Purchased at Iida Sake Shop @ Shiki.

Purchased at Hankyu Umeda main store on 11/13 Kokuryo Miyako, which is said to be a fantastic sake rice. It was recommended to be heated (🍶), so that's what I had it. First, at room temperature. The first thing that comes to mind when you put it in your mouth is how light it is! It goes down your throat quickly, and after a little while After a little while, the umami of the rice gradually spreads. The aftertaste is crisp with a touch of sweetness It is crisp without leaving a sticky sweet aftertaste. When it is heated up It gives a softer impression. The taste of rice is quicker and sweeter. The aroma through the nose is also nice and full! It is indeed delicious warmed up! I paired it with sashimi, and it went very well with it because it refreshed my palate without interfering with it. ✨️

Kansai Salmon Roe Bring and Share Year-End Party (11) Sake brought by Yasube and Kaorin (2) It's from Yamazaru's brewery. It seems to be a tax return gift from the hometown. Made from Miyatamamochi glutinous rice produced in Takadomari Takadomari seems to be the name of a place, but "taka" means "hawk" and "taka" means "success" in Japanese. It is an auspicious sake 🤗. Mochi four-step brewing It was a little bit light and refreshing, but the umami was strong and gentle 😋. I tried heating it up, but I thought it would go well with warmed sake!

When I was in Yamaguchi on a business trip, I decided to buy some sake I hadn't had, I brought back a monkey (the picture of the monkey is cute). It's a little sweet, But the sweetness is not fresh or fruity. Is it the sweetness of the rice? I can also taste a slight sourness. Overall, it is refreshing and easy to drink 😙. It seems to be made from a fantastic type of rice called "Koriyanto" 🧐. It is said to be made from a mysterious rice called "Guriyanto" 🧐. I still have a lot to explore about Yamaguchi sake! (I'm just going to drink it though 😝)

I've been drinking in Osaka. ❗️ Dotonbori is still too crowded with foreigners, But it's nice to go one street off the main street and not so many people 🎵. I went to 3 izakaya (Japanese style pubs)! And in 3 pubs I only saw one sake from Osaka, and it was Akirika 🤣. I didn't see any Osaka sake at the last izakaya in Osaka, but I didn't see any Osaka sake this time either 🤣. Keep up the good work Osaka🤣. I asked if there was any Kansai style food at the izakaya. I asked him. I asked if there was any Kansai-like food at an izakaya and was served surume-no-tempura (surume tempura). Surume tempura? But it's so good... I'll make it at home next time... I wandered around Shinsaibashi and Namba, On the way, I found a sign that clearly looks like a penis: ❗️ I'm pretty sure that's what they're after 🤣. At any rate, I had a great time talking and drinking with the waiters at the izakaya in Osaka and an old guy I didn't know who was drinking alone👍. As expected of Osaka, the people are very interesting👍

Purchased at Kitakyushu Sake Shop Drive 2 months ago Aiyamazaru I liked quite a bit at a sake event in Kitakyushu a few months ago. This one is from the lot that came out after that event. Cold sake. The aroma is neither lactic nor fruity. Shocking on the palate (I've had it once at an event...) Dark mellow sweetness like chocolate 🍫. Then, from the mid-palate, the aromatic taste increases and the aftertaste disappears quickly. It's like eating an Alfort... The two characteristics of "Aizan-ness" and "Yamazaru-ness" are more emphasized than the one I had before, but they are kept in good balance. As the meal progresses, the "Yamazaru-ness" comes out, so it might be better to drink it by itself.

I opened a bottle of Nagayama Shuzo's Yamazaru Aizanazaru, which I purchased after visiting the brewery when I was back home in Shimonoseki in September 😀. It is brewed with Aizan and is called "Ai Yamazaru" 🤣. It tastes refreshing on the palate. It tastes refreshing in the mouth, but the fruitiness comes through at the end, which is the opposite of the usual pattern, but it's a delicious sake 😀. At the brewery, I was able to pour as much as I wanted and taste it, but I was able to experience the taste more by drinking it at home slowly 😀. I hope you will have a chance to try this sake.

Slightly fruity and earthy? Smells like mushrooms. With alcohol alone, I felt it was not quite enough, but when paired with snacks, it tasted good. This time, I tried unsalted nuts and kimchi. It was better with a punchy flavor like kimchi.
