I opened a bottle of Nagayama Shuzo's Yamazaru Aizanazaru, which I purchased after visiting the brewery when I was back home in Shimonoseki in September 😀.
It is brewed with Aizan and is called "Ai Yamazaru" 🤣.
It tastes refreshing on the palate.
It tastes refreshing in the mouth, but the fruitiness comes through at the end, which is the opposite of the usual pattern, but it's a delicious sake 😀.
At the brewery, I was able to pour as much as I wanted and taste it, but I was able to experience the taste more by drinking it at home slowly 😀.

Limited edition of 2000 bottles. Fruity, robust umami with a hint of sweetness. Not too much bitterness. It is also delicious 😋.
Yamazaru Fruits
This is an autumn-only brew. It is made with a rare sake rice called "kuriyako". It has a deep umami flavor and a sake-like quality to it. It is also suitable for heating up.
Junmai Daiginjo Yamazaru
The rice is made from Yamada-Nishiki from a contract farmer who is apparently 35 years old. The aroma was a bit unique to the nose, though it was easily recognizable and tasty.
Yamazaru: Unrefined, unfiltered, unpasteurized sake.
This sake is also made with Koriyako. It has a complex, thick, rich flavor with a unique lactic acidity, and the aroma on the nose is also a bit peculiar.

On the second morning of my second day back home, I took the JR train to Asa in Sanyo Onoda City, which is next to Shimonoseki, and visited Nagayama Shuzo, the brewer of Yamazaru in Asa.
When I told the owner that I was from Kansai, she told me that they were just now opening a store in Hanshin, Umeda, and that they were sending most of their sake products to the store... I was so surprised 🤣.
Still, I asked my mom if she could recommend any sake that they don't send to Kansai as a souvenir for my sake-loving friend, and I got it 😀.
Perhaps feeling sorry for me, my mom brought out more than 10 bottles of sake from the fridge and told me to pour as much sake as I wanted and drink it as much as I wanted 😇.
They were all delicious, but I especially liked this Aizanzaru 😀.
It's a mountain monkey brewed in Aizan, so it seems to be an Aizan monkey 🤣.
I thought it was a refreshing, sharp and fruity drink, just as I expected from Aizan 😀.
I heard that it is limited to 2000 bottles and they are sending it to Hanshin as well, so I will buy it again after I go back to Kansai 😀.

It's not super sweet, but it's fruity. It has a firm umami flavor with a touch of Omachi character.
If this were a draft sake, it would be very good.
