101 check in ✅Personal recommendation for a brewery 😆Denemon: ❤️ After 2 years? I finally came across it ✨. If the name of the sake rang a bell, you're right 👍It's an amazing sake that has taken the name of a famous book. Denemon is a sake brewery brewed by just one person. The name comes from Michel Carouge's famous book "The Bachelor's Machine," which is cited as the bible of the master brewer. It is also related to Marcel Duchamp's "The Bride Naked by Her Bachelors, Even (a.k.a. The Big Glass)". When I think about the sake rice "Aizan," I can see the image of this sake being brewed with love while loneliness, loss of humanity, and the desire for barren love cross the mind 🧐. Today we are going to start with our special bird ❤️ no doubt👍and our favorite gateau rusk🥰Carouge & Duchamp, so it's like a French 🇫🇷... ❤️ By the way, this "bachelor" is not sweet at all 🤘 it is rather tangy and spicy, and has a sharp taste, leaving a bitterness that is typical of Aizan. But it is not too alcoholic, and is indeed easy to drink 🧐. When paired with the rusk with pomegranate on top, the sweet and savory flavors are gradually felt. The flavor really changes depending on the food.

The fullness is considerable, and on the second day the mouthfeel changes quite fruity, different from when the bottle was opened! Fateful encounter with a guess sake 😊. We had it at the place where we stayed during our training 🍶. The first day of opening the bottle. The appearance is beautiful with a warm, light cloudy appearance. The aroma is soft and fresh, with a hint of sweetness. It is accompanied by a gentle woodiness, an astringency like grape skins, and a fresh sweetness like freshly cut pears. The whey aroma creates softness. The rice aroma is soft, with a hint of white dumplings. The firm sweetness of the rice spreads with a soft acidity. There is no sense of overdoing it at all, and the juiciness is extremely modest. From there, the flow of umami, which gives a good sense of fullness, disappears with a light stimulation that passes through to the nose. The lingering aftertaste is a sense of looseness that lingers on the nose and a beautifully tightened astringent taste on the tongue. The third day after opening the bottle. The aroma has not changed much. On the palate, in addition to the sweetness with a clear rice flavor, there is a refreshing acidity that spreads quickly. The refreshing and stimulating flow from the back of the throat to the nose is pleasantly intoxicating, and the soft umami of the rice with fullness is also very pleasing. The finish is clean, with a moderate lingering aftertaste and a bitter astringency. Oh, it is delicious. ☺️ You can tell that the brewer put a lot of thought into this sake 🍶. Last year, I bought a LOW HIGH WHO from here because it was so good 😘. The aroma is mild, sweet and lactic acidic. The mouthfeel is mainly sweet and refreshing, the acidity and richness of Yamahai appear softly in the middle, and the finish and aftertaste are again very beautiful. It is the most recommended brand this year among the newcomers. It is even more refined than last year. Perfect for my chanteuse 🤗. As the label on the back says, drink it while listening to Litogri 👍.

Echigo Den'emon is brewed by the brewery's toji, Kouaoi Kato, alone. The label, the construction, the sake itself, everything is very interesting 🤔. One of my sake recommendations that makes me think that one day I will be able to drink a sake that makes my genes smile 🍶. By the way, vesicapaisis is the overlap of two identical circles when they are formed through their respective centers. In sacred geometry, it is the shape that means "the beginning of everything" 🤔. The appearance is a warm misty white with a hint of ochre. Fine gas bubbles dance in the haze. The aroma is gorgeous with a hint of gentleness. Aromas of pear and melon. It is round and refreshing. Rice aroma like freshly pounded rice cake. The sweetness is modest and present, with a sense of roundness and softness. The acidity that spreads with a soft gasiness has a refreshing and clean koji taste. The middle part of the flow contains a slight bitterness, and the disappearing sharpness is soft, and the lingering astringency is also intoxicating with complexity. I usually like sweet and umami, so although the direction is different, the taste of this wine is very delicious with a sense of solid structure 🥰. A cup that invites me, a lover of sweet and tasty, to a new door of taste: ☺️ I definitely want to try other VESICA PISCIS in the future! Thank you for the food 🍶.

Toyosaka -Toyosaka-. This is the first Toyosaka Echigo Den'emon we have had in a year, and it is made with Ginbukiyo (a cross between Yamadanishiki and Tamakoe). Here are the specs for the soft-water Yamahai Yamahai Tank Shiboribori Nama-nazake. It has a grape-like heady aroma and a fresh, rich, apple-like sweetness with a slight dustiness. The astringency of the aftertaste is still present, although it is a bit more subdued than Den-emon's, and it has a perfect balance of freshness and enjoyment during meals!
