Appearance clarity 55, Aroma unmemorable, Flavor balance 60, Structure/body 45, Finish/completeness 45. This is a dry sake with a +3 ABV, which means it's not sweet and only mildly dry. However, as expected from its high proof, the first impression is of clarity.
Junmai Daiginjo: Clear, colorless or pale yellow, bubble-free, smooth, with a faint hint of inherent sweetness, emphasizing the dryness rather than the amami of the rice; similarly smooth acidity, almost no bitterness due to the high malt content, Umami is somewhat limited, but again, a safe balance with flavors that come alive with temperature; silky in the mouth without graininess, but not much depth even at room temperature; finish is clean and short, not sweet, with an alcoholic finish that lasts less than three seconds.
I also like Momokawa because it is easy to drink. Easy to drink, but not in a watery kind of way, it's very robust. But even when drunk with tofu, it does not kill the flavor of the tofu 😊.

The brewery is located in Oirase-machi, Aomori Prefecture.
The rice is polished to 50% "Bolts from Aoten no Bolts" produced in Aomori Prefecture.
The aroma is gorgeous and full-bodied,
soft rice flavor, and a gentle and elegant aftertaste.
