Finally conquered Okayama.
It was served hot in a miso hot pot while the lingering summer heat was still lingering. I wanted to drink it with a clear taste, but the oak aroma didn't suit me and lingered in my mouth.

Sake from Tagaji's brewery, Juhachimori.
Very mild taste, quite different from Tagaji's strong taste.
It has a gentle yet delicious and aromatic flavor of Omachi, and finishes with a bitterness, so it is better suited for simmered dishes with soup stock or grilled fish than for sashimi.
It is better as a food sake than as a stand-alone sake.

The first bottle was a souvenir for myself from a recent trip to Kagawa, a local sake from Kojima, Okayama, called Juhachimori.
It was a delicious sake, fruity and sweet, with an overall gentle taste!

Purchased at Nishina Food. This is a local sake that we found in Kojima, the town of jeans. It has a slightly dry taste with a certain elegance that goes well with the iidako (octopus) from Shimotsui, as it is a sake brewery that makes sake that goes well with the seafood of the Seto Inland Sea.

Fruity, rice milk kinda sweet. It’s like moscato without the bubbles.
Zebra version unsure what the Japanese was.
Consistent energy with the bottling, color of black and white logo, and the taste.
Purchased at a liquor store.
Cold sake.
The aroma is wine-like and gradually cheese-like with a mellow aroma. It is quite strong and I personally do not like it...
The sweetness and umami are on full display, but the astringent taste is gradually developing. It also has a slight sharpness and finishes with a sense of coolness.
Recommended for intermediate level sake drinkers.
