This year is the first year that I have had all three major nigori 😄Every one of them is delicious and dry. Sake that goes well with all kinds of food. However, each brewery has its own unique taste. I hope to win them all again next year.

Hirotogawa Junmai Nigori.
We managed to get a bottle of Hirotogawa nigori again this year!
First, we had the supernatant.
The top nose has a pleasant aroma of muscat and peach, and the secondary fermentation in the bottle gives it a pleasant gaseous sensation.
The fruity sweetness is typical of Yume-no-Ko, and despite being nigori sake, it has a mild texture on the tongue, with a beautiful acidity and a firm bitterness to tighten the finish.
When mixed with ori, the impression of umami is enhanced and the balance is further improved. This exquisite balance is still the best!

There are some sakes that you want to drink every year while you want to try various nigori-shu as a nigorist.
Here is one of them 🍶.
Shuwashu pear young peach melon dry cream rice soda!
The exterior is a bright snow white with a slight transparency. The tailings are fine and rice particles sparkle and dance in the sake.
The gasiness is shwashy and very energetic🫧.
The aroma is gorgeously sweet with a hint of freshness.
Aromas of pear, Japanese pear, melon, and young peach.
A fresh cideriness that covers the gorgeousness is bursting with freshness, and the elegant and cool alcohol aroma is also intoxicating.
There is also a hint of koji aroma like amazake (sweet sake).
Rice aroma like freshly pounded rice cake.
The texture is smooth and silky.
The soft sweetness is velvety on the tongue, and the acidity is very gentle and fine.
The refreshing pear-like aroma spreads sweetly and is followed by a stimulating sizzling sensation.
On the tongue, the sweet, smooth umami, with a hint of rice and koji (malted rice) from the sake's tailings, flows along with a dry and bitter taste.
The finish is soft and crisp, with a refreshing aftertaste.
It is schwarmingly sweet and gorgeous, yet refreshing and dry, and can be drunk crisply.
This is quintessential and very tasty!

It's that time of year again for Hirotogawa's nigori.
Last year I failed to open the bottle and it spilled a little, but this year I successfully avoided the problem by removing the gas and closing the bottle immediately after opening it. The moment you open the bottle, you can feel the fullness of the gas as the sake rises to the surface.
The sake itself has an elegant sweetness that fills the nose from the aroma. The taste is milky sweetness can be felt on the palate, but it is easy to drink without any unpleasant nigori (bitterness). The mild carbonation makes it easy to drink. As expected of Hirotogawa. It always satisfies me.
