Looks like the 9th cup. From Niigata. First time for this one too. At this point, I was struggling to see how much I could eat. The owner had some free time and started talking with us. He was an interesting person.

Little thickening. The smell is high acidity and sweetness as well as umami, and the bitterness is strong in the latter half.
The tongue is rough and strong.
Acid and bitterness are thin and not long as a lingering aftertaste.
Purchased at an event held by a group of sake breweries in Nishikaga-ku.
It tastes more like white wine than the regular wine yeast brewing. The acidity is quite strong, so I personally prefer the regular product.
