On the first day, the acidity is too strong and disappointing; on the second day, the horniness settles down, and from the third day, my tongue gets used to it and I can taste the umami. I guess it's a cool sake, I'm not used to drinking it.

The aroma is gorgeous and mellow. Slightly sour and astringent taste comes later.
This brewery is famous for its sake made with wine yeast.
The aroma is certainly muscat-like, and the clear, light taste that lingers on the tongue after a long, blissful finish.
The Echigo sake does not disappoint.
Echigo sake does not disappoint.
It was the first drink at home after returning to Japan. It was a gift from my husband who went to Echigo-Yuzawa for a moment to prepare for winter.
It is a bottle only available in Niigata Prefecture, and I drank it smoothly. It is easy to drink. On that day, I had fried mushrooms and served them on top of salmon meuniere, and I thought "maitake mushroom tempura" would be the best match for this sake.
In Tokyo, there are a lot of maitake mushrooms in Yukiguni, but in Echigo-Yuzawa, you can get maitake mushrooms so big you'd think they were different mushrooms.
It's autumn, isn't it?
Light, dry, and refreshing sake.
As the label says, it already has a great summer tangerine taste!
It has a slight sweetness, but the citrus acidity is pleasantly juicy without being too sour!
The aftertaste is light and the 10% alcohol content makes it feel like a dry chu-hai!
Is this sake?
It really is refreshing, like summer tangerine juice!
Niigata is a wonderful place!
