This brewery was founded in 1688 in Hirado City, Nagasaki Prefecture. It was the official sake brewery of the former Hirado clan. Two young brothers returned to the brewery to brew "Fukuda". All of the sake is brewed with Nagasaki-grown Yamada Nishiki. They have focused on growing their own rice and are now growing some of the Yamada-Nishiki themselves. Fukuda" has become the brewery's signature sake and has won many awards in sake competitions. In 2023, the "Fukuda" brand will be renamed "Fukkai.
This sake is the outlier of Fukkai, made with out-of-grade rice. Grape Muscat type aroma. It has no depth and is a little perky.
