KumakichiThe 7th bottle of sake opened during GW was Shinshu Kamerei Hitogokochi Junmai Ginjyo Hi-ire! The other day, we opened a bottle of unfiltered unpasteurized sake that had been stored at Lemacom, so we opened this one to compare the tastes! The other day's unfiltered nama sake had a nice ripeness and sweetness, but what about the fire-brewed version? On the first day, I could feel the freshness that is typical of Shinshu Kamerei, but the sweetness and flavor were weaker? This is delicious in its own way, but I enjoyed the previous unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered sake. コタローOn a personal milestone day, I opened this bottle for the first time with high expectations. The aroma is fruity and sour, like apple or pear. It smells so good, I could sniff it all the time. When you drink it, it is very crisp and a bit thick on the tongue. The sweetness and umami come through with a hint of sourness, and just before you think it is too sweet, it starts to taste sweet with sourness. Just before you think it is too sweet, it disappears with the sourness. The carbonation and acidity go through the nose. I think it has a little bit of wine-like taste. The taste is as good as the rumors say. The next day, the moment I drank it, I thought, "This is delicious! The next day, too. The aroma is a bit bitter and grapefruit-like. When you drink it, the carbonation is gone, but it is still smooth and easy to drink. For a moment, there is a strong sweetness... but then it ends with just the right amount of acidity that doesn't go all the way to sourness! The sweetness is not pulled out and the sweetness is not pulled in. So the sweetness doesn't get dragged out, and you just want to drink another cup. I would like to drink this again.

ジャイヴGW Sake Day Part 2 After the 291 check-in project, we are back to posting about the sake we drank at GW 😁. After the opening glass of "Sagami", we next had a glass of this sake, which is rarely available in my hometown of Fukui and is hard to find in the city. Shinshu Kamerei Junmai Ginjo Hitogokochi. It has a slightly sour, slightly apple aroma, a clear mouthfeel, deep umami, and a sweetness that extends to the back of the mouth, and then finishes with a lingering aftertaste. It has a lingering aftertaste that seeps into the mouth. I first drank "Shinshu Kamerei" last summer, and one of my goals for this year was to achieve the goal of drinking it at home, so I stopped by the Kanazawa distributor before going to Daigo, but it was temporarily closed 🤣. I'm planning to go to Nagano in the summer, so I hope I can achieve it there 🤔. The third picture shows beer and appetizers before sake! ［The third picture shows the beer before the sake and the appetizers 😲 The pilsner from Minoh Craft Beer, Kanazawa Craft Beer, and Sapporo Lager Beer, aka Akaboshi, which I love to drink, are also available for unlimited consumption, so the range is really wide 😲.

There is a distributor near where I do business, and I happened to be in the neighborhood when I saw the information about the new shipment, so I snuck out while I was at work, lol. I had a bottle of Shinshu Kamerei Hitogokochi Junmai Ginjo Unfiltered Nama-shu. The aroma is fruity, like apples, and it fills the glass. Mmmm, nice aroma 😊. On the palate, the robust umami and sweetness of the rice is quickly overwhelmed by a slight acidity and a tangy, slightly bubbly sensation in the mid-palate, and then it finishes cleanly. This is delicious! The reason it is so refreshing despite its strong umami is because it has a good balance of umami sweetness, acidity, and piquancy❗. We finally got our hands on a bottle of Shinshu Kamerei, so our expectations were high, but the taste exceeded our expectations. ⤴️ Shinshu Kamerei is now hard to find, but I can understand why it is so popular 😊.

I would like to visit Okazaki Shuzo's brewery eventually 🚗. The appearance is clear crystal. Fruity with standing acidity. The sweet aroma of apple coming from the back is far away. Smooth round texture. The attack of intense fruity sweetness! Vivid taste from which the acidity, including a subtle acidity, harmonizes. ☺️ Surprised by the richness of the flavor, we often meditate and enjoy the beautiful harmony of its sweetness and acidity. In the mid-palate, the sweetness, acidity, and beautiful umami blend together and spread out, each asserting itself. The aftertaste is medium, but after that, you can replay the flow of flavors in your brain and enjoy a happy time for a while. The impression is that the flavor is intense and strong. It is a Shinshu Kamerei that is more enjoyable for its vivid flavor than its aroma. It is rich, fruity, and delicious 🥰. I hope many people will drink it, but it is a sinful sake that makes me want to keep it all to myself. Thanks for the treat 🍶.
